Madfoun, مدفون : Madfoon is one of numerous Arabian meals made with a combination of meat and rice. This signature dish is differentiated by a cooking technique in which the marinated meat is cooked in an underground hole where it is placed on the sand and surrounded by charcoal.
Madhbi is in the same sort of family as Mandi but even simpler in preparation. If you are looking for a mandi rice dish, you have to check out this easy beef, chicken , mutton and fish mandi recipe.
A rice dish flavored with spices and chicken pieces coming all the way from Arabia to celebrate Ramadan.The smoke and heat slowly cook the meat, keeping it succulent and tender while providing it with a slightly smoky flavor and aroma. It is believed that this cooking method was inherited from the nomadic period, when traditional ovens did not exist and cooking meat underground was a convenient way to utilize nature.
Nowadays, the madfoon technique - usually associated with the Yemeni city of Al Hudaydah - has been slightly modernized, but continues to produce the same authentic dish.
After several hours of cooking, the meat is tender and moist, thoroughly infused with spices. Since it takes a lot of time to prepare and cook madfoon, it is only found in specialized restaurants.
The Arabic name Madfoon literally means buried, and as the name suggests, the meat is wrapped in aluminum foil, and buried in an underground hole in the sand, where it is surrounded by charcoal. It is placed on top of a plate of saffron rice,

Coriander leaves-1 hand
Pepper powder-1 tsp
Coriander powder-3/4 tsp
Cumin powder-3/4 tsp
Cinnamon powder-1/4 tsp
Clove powder-1/4 tsp
Cardamom powder-1/4 tsp
Kashmeeri chili powder-3/4 tsp
Olive oil-2.5 TBS
Potato
Capsicum
Onion
Long grain basmati rice-3 cup
Pepper corn-1/2 tsp
Cumin seeds-1/2 tsp
Coriander seeds-1/2 tsp
Onion-1/2
Capsicum-1/4 potion
Hot water/ chicken stock -4.5 cup
Maggi chicken stock -1
Garlic-2 cloves
Olive oil-2.5 TBS
Whole spices
Dried lemon-1
Salt as required

വളരെ എളുപ്പത്തില്‍ ചെലവു കുറഞ്ഞൊരു ചിക്കൻ മദ്ഫൂൻ: @YazusCrazycuisine പാചകരീതിയിൽ പ്രത്യേക റെസ്റ്റോറന്റ് ശൈലി പരമ്പരാഗത യെമൻ ചിക്കൻ മദ്ഫൂൻ പാചകക്കുറിപ്പ്. ഒരു ചെറിയ ഇടവേളയ്ക്ക് ശേഷം, 144-ാമത്തെ വീഡിയോ -അറബിക് പാചകക്കുറിപ്പ്, ചിക്കൻ , ബീഫ്, മട്ടൺ, ഫിഷ് മന്തിഎന്നിവയ്‌ക്കൊപ്പം സ്വന്തം പാചകക്കുറിപ്പ്.
ഇറച്ചിയും ചോറും ചേർത്ത് തയ്യാറാക്കിയ നിരവധി അറേബ്യൻ ഭക്ഷണങ്ങളിൽ ഒന്നാണ് മദ്ഫൂൺ. ഈ സിഗ്നേച്ചർ വിഭവം ഒരു പാചക സാങ്കേതികത ഉപയോഗിച്ച് വേർതിരിച്ചിരിക്കുന്നു, അതിൽ മാരിനേറ്റ് ചെയ്ത മാംസം ഒരു ഭൂഗർഭ ദ്വാരത്തിൽ പാകം ചെയ്ത് മണലിൽ വയ്ക്കുകയും കരി കൊണ്ട് ചുറ്റുകയും ചെയ്യുന്നു.
