    I'm always making my own jerky, it's way too expensive to buy in them little packets and you never seem to get much either.

      And it just doest chew like the homeade stuff. I like a tuff jerky that i chew the flavors out of. Not stuff that is like leather and doesnt break apart.

    1/2 cup soy sauce
    1/4 cup washyoursister sauce
    2 teaspoons garlic powder
    2 tablespoons red pepper
    2 tablespoons of sugar

    Weber's chicago steak seasoning, let that sit for couple of hours in the fridge, and dehydrate. Easiest way I've done it, but this one sounds good though

    Think about black molasses for a sweetness rather than brown sugar or honey. Definitely adds more flavor in my opinion

    I make it 50/50 sauces.
    Sprinkle garlic powder, salt, pepper, and brown sugar or honey, sweetener etc to your liking. Cut thinner for quicker or thicker for longer dehydration times. Try both. Experiment with whatever you'd like but make sure you have fun. Eventually you'll find what you like. Most importantly let it soak for at least 4-24 hrs.

    Pat dry before putting in the smoker. It takes a lot of time at 185 to remove the surface moisture.

      When you have a bunch of meat to cook and little time due to other responsibilities, you find ways to cut out the less important tasks. You need at least two paper towels per side of meat to flip over. Cost savings as well.
      Work smart not hard

      We put it for 6 hours or once it looks like plastic, by 4 hours flip them

    I've marinated for 3-4 hours and 24-48 hours and I saw no difference. The meat is so thin that you never need more than 4 hours.

      Is good if your dehydration machine to go to 160. Or your going to need curing salt and lots more time doing it.

    Almost my recipe to a T except I do 50/50 soy/worchestershire. If you do it in an oven you can spread the jerky and pour the marinade over in in a shallow pan. When the liquid is gone nothing but sweet sticky goodness. Sprinkle a little more black pepper and pepper flakes about halfway through for a little more heat.

    I tried making my own with some sirloin… I know I know, but I didn’t want to run to the store for the right cut of meat, but I let it marinate for about 4 hrs then air fried it, it looked good but when I take a bite the meat is wayyyy to mushy/melts in my mouth any tips? I’m definitely trying a better cut next time..

      Try a slightly Higher temperature, and make sure to pat completely dry before cooking. And yes a tougher cut of meat will help. But sounds like you just didn’t cook long enough / too much moisture.

      When you make it. You check it buy bending it in half. If it leaves whight marks when bending it's generally done. If you cut it to thick this will take much more time to get it where you desire. I do 1/4 inch witch is a little thick but I like tougher beef jerky that needs lots of chewing and the flavor last longer. On that note I also marinate a full day or more.

    After me my dad would kill a deer I would use the tenderloin and turn it into beef jerky I pretty much did the whole process of what you did but I would add like sriracha sauce and I was just leave them hanging on the oven racks at around 190

    I get conflicting opinions on curing salts… some saying if you don’t use them you could get lethal food poisoning and other say it’s just an ins plan to keep you from getting lethal food poisoning and others that don’t seem to use it…. I’m confused as to whether I should use curing salt

      Because in the oven you don’t get the smoke flavor that you’d get using a smoker
