Another great job! Love your extreme budget challenges! You probably know this but you can make your bone broth very quickly in the Instant Pot. Put your bones, vegetable scraps, water and vinegar in a strainer basket in the IP. Cook high pressure for one hour with natural pressure release. Then you simply pull the strainer basket out and you have clear bone broth. Your daughter is adorable!

I LOVE my crock pot. When I do use it, I put Pam in it so I don’t have a nasty clean up. I really like to use bone broth, rather than chicken flavors. When I make soups, I like to take a small amount of the veggies out of the pan and use my immersion blender. It makes the soup creamier.

Just a suggestion for the broth - you can cook it directly in the instant pot along with all the drippings rendered from cooking the chicken. Using the pressure setting and running it through 2-3 times at 120 minutes will produce more flavor and benefits from the bones. You can then strain it and remove the fat from the top as needed.
Do you mean 3 cycles each of 120 minutes? Do you open the lid, or just cancel and put another 120 minutes on? I haven't cooked anything that long, so not sure if you're doing this because 120 minutes is the max time on the pot, or another reason. I'd like to know.
Avi Bonn three cycles at 120 minutes each, usually on low pressure, but I’ve done it on high as well. 120 minutes is the max on mine, so I have to do it more than once. With chicken bones usually two, with beef bones three. You do not open the lid, just cancel and set it again. This is only for bones. If you also have meat on those bones that you would like to save for future use, then you set it to 30-60 minutes, open the lid and get the meat off, then put the bones back in and keep cooking them. If you don’t do that then your meat will turn out very tasteless and with a gross texture.
I like that you used pantry staples in this video. Maybe you could do a video of some basic pantry staples so that new cooks could have some things on hand.

Here is how I shop for dinner when on a tight budget: 1) The foundation of each meal will be made from dried pasta, rice or potatoes. And I buy the plain raw version of these unless there is an exceptionally good sale on a flavored or pre-cooked or instant version of any of these. The price per serving is what I go by when deciding which brand/type of food product has the best price (bring a pocket calculator to the store and look at the package information). When using raw potatoes, I assume each adult will get two medium size potatoes. 2) The next type of food for the meal will be a generous portion of non-starchy vegetables. I usually go with bags of frozen vegetables both for their low cost and for their high vitamin content (often higher than so called "fresh" vegetables that may have spent weeks in cold storage). I avoid those frozen boxes or bags of flavored vegetables that have sauce or pasta added because those are expensive. 3) Next, I will choose some kind of animal protein. I always look at the price per serving and do measure out the serving sizes when using this type of food. Inexpensive animal proteins include raw eggs, shredded cheese, bacon end pieces, Vienna sausage, bone-in chicken thighs, canned tuna and Spam. Sometimes there is a bargain in the discounted meat section. If I buy a beef roast or pork loin, it is always cut into boneless serving portions when raw, re-packaged in Food Saver bags and then put in my freezer because it is all about portion control. People will over-eat the expensive stuff if you cook a large roast or an entire ham. The bones and raw scraps from chicken, pork or beef do not go to waste -- they get slowly simmered in water to make stock which I store in the freezer until needed. The stock is used along with leftovers to make a quick soup for lunch. 4) The final ingredient I look for is some kind of condensed cream soup, gravy, oyster sauce, Korean BBQ sauce or pasta sauce that has a good per serving cost. The dinner is simple to make. The veggies, meat and whatever is used for a sauce are cooked/heated separately or together and combined to make a topping for the cooked rice, pasta or potatoes. Some combination of salt, herbs, spices, Worcestershire sauce, soy sauce and/or hot sauce is used to flavor the topping. Sometimes the veggies are saute'ed in butter or bacon drippings before being added to the sauce. Shredded cheese can be sprinkled over each plate of food just before serving. To make a high protein vegetarian dinner, I cook a whole grain product (brown rice, whole grain pasta, quinoa, wheat grain, kamut....) in one pot and some kind of dried legume (beans, peas, lentils) in another pot. Wheat grain, peas and most kinds of beans benefit from soaking overnight before cooking. So, each person's meal is basically two serving portions of a cooked whole grain food topped with one serving portion of a cooked dried legume. To make this taste better, I make some kind of flavorful topping using cooked non-starchy vegetables plus some kind of sauce (condensed cream soup, homemade white sauce or melted butter plus seasonings/flavorings such as curry powder, Korean BBQ sauce...).
You should let that chicken rest a bit more. It was way too hot and cutting / shredding chicken that early will release the juices, making it a drier meat.

We make the amish baked oatmeal all the time, it's SO GOOD!! It's also a great way to use up any apples in your fruit bowl that are looking a little old. Chop them up and throw them in that oatmeal bake, it's so good!

My mom made chicken stew. She used all that you used but she did not put in potatos. Instead, she used leftoover mashed potatoes and made potatoe dumplings with them and then dropped those dumplings into the broth after everything else was done. The dumplings would thicken the soup as they cooked. She even had added rice in the stew earlier to cook with the veggies. And lastly, she threw in a few peas that cooked rather quickly.
Wow it's crazy you got all of that for $20. You made so many meals with what you got! I always make bone broth. We keep all of our veggie scraps and bones. I haven't tried it in the slow cooker. The egg bake looks so good and filling. You have such great tips for saving money!
@@lklein9262 when we make our broth, we put all of our bones, veggie scraps, bay leaves and any other seasonings in a large stock pot, fill it about 3/4 full(depending how much other stuff we have) then we turn it to medium heat until it starts simmering, turn it to low and let cook for 6-10 hours depending how much time we have that day.

You can cut some tater into "chips" put them on a cookie sheet with either parchment paper or silicon mat at 450 until they are as crispy as you like. They will bubble up a bit. It makes them yummy. And then mash some of them cooked pinto beans with just a bit of enchilada sauce and dips your chips in the dip. Delicious!!!
Of all the cooking videos I have watched, I really think yours is very good at including the nutritional aspect of cooking and planning. I had to take a nutrition course in Nursing School and we had to plan meals for one day that met all the nutritional needs recommended. It was a difficult assignment. Thank you.
Good idea too! I just put water in my crockpot and let it heat up to clean it if I need too. Everything peels off especially gravy. Cooking spray has a propellant in them. They don’t usually tell you that.

Hi Julia. You amaze me with these delicious cheap meals. Another tip would be to buy a rotisserie chicken instead of raw. It's about the same price and no cooking involved and you still have the carcass for making your broth. Hi Sweet Brinley! One kitchen tip I have that is amazingly smart is if you have a potato press for making mashed potatoes (one that looks a lot like your garlic press but way bigger), use it to squeeze out the liquid from frozen spinach. I also use mine for squeezing out tuna juice when I open a can or pouch of tuna. I can't stand a soupy tuna salad. This eliminates that. I also really like canned spinach, so I use the press for that as well. It's just a thought/tip if you have one of these gadgets. Bye sweetheart. I was taught to never salt your beans until AFTER they are cooked, so they come out soft and creamy.
Try sorting your beans on a jelly roll pan. You can spread the beans out. It works great.

3) Next, I will choose some kind of animal protein. I always look at the price per serving and do measure out the serving sizes when using this type of food. Inexpensive animal proteins include raw eggs, shredded cheese, bacon end pieces, Vienna sausage, bone-in chicken thighs, canned tuna and Spam. Sometimes there is a bargain in the discounted meat section. If I buy a beef roast or pork loin, it is always cut into boneless serving portions when raw, re-packaged in Food Saver bags and then put in my freezer because it is all about portion control. People will over-eat the expensive stuff if you cook a large roast or an entire ham. The bones and raw scraps from chicken, pork or beef do not go to waste -- they get slowly simmered in water to make stock which I store in the freezer until needed. The stock is used along with leftovers to make a quick soup for lunch.
4) The final ingredient I look for is some kind of condensed cream soup, gravy, oyster sauce, Korean BBQ sauce or pasta sauce that has a good per serving cost.
The dinner is simple to make. The veggies, meat and whatever is used for a sauce are cooked/heated separately or together and combined to make a topping for the cooked rice, pasta or potatoes. Some combination of salt, herbs, spices, Worcestershire sauce, soy sauce and/or hot sauce is used to flavor the topping. Sometimes the veggies are saute'ed in butter or bacon drippings before being added to the sauce. Shredded cheese can be sprinkled over each plate of food just before serving.
To make a high protein vegetarian dinner, I cook a whole grain product (brown rice, whole grain pasta, quinoa, wheat grain, kamut....) in one pot and some kind of dried legume (beans, peas, lentils) in another pot. Wheat grain, peas and most kinds of beans benefit from soaking overnight before cooking. So, each person's meal is basically two serving portions of a cooked whole grain food topped with one serving portion of a cooked dried legume. To make this taste better, I make some kind of flavorful topping using cooked non-starchy vegetables plus some kind of sauce (condensed cream soup, homemade white sauce or melted butter plus seasonings/flavorings such as curry powder, Korean BBQ sauce...).

We make the amish baked oatmeal all the time, it's SO GOOD!! It's also a great way to use up any apples in your fruit bowl that are looking a little old. Chop them up and throw them in that oatmeal bake, it's so good!

could add some raisins too or dried cranberries or apricots but i know that gets more costly. Just depends what you might already have on hand.

My mom made chicken stew. She used all that you used but she did not put in potatos. Instead, she used leftoover mashed potatoes and made potatoe dumplings with them and then dropped those dumplings into the broth after everything else was done. The dumplings would thicken the soup as they cooked. She even had added rice in the stew earlier to cook with the veggies. And lastly, she threw in a few peas that cooked rather quickly.
Wow it's crazy you got all of that for $20. You made so many meals with what you got! I always make bone broth. We keep all of our veggie scraps and bones. I haven't tried it in the slow cooker. The egg bake looks so good and filling. You have such great tips for saving money!

@@lklein9262 when we make our broth, we put all of our bones, veggie scraps, bay leaves and any other seasonings in a large stock pot, fill it about 3/4 full(depending how much other stuff we have) then we turn it to medium heat until it starts simmering, turn it to low and let cook for 6-10 hours depending how much time we have that day.
Roasted cickens are my favorite! A little paprika on the top makes for a great crispy crust!

You can cut some tater into "chips" put them on a cookie sheet with either parchment paper or silicon mat at 450 until they are as crispy as you like. They will bubble up a bit. It makes them yummy. And then mash some of them cooked pinto beans with just a bit of enchilada sauce and dips your chips in the dip. Delicious!!!

Good idea too! I just put water in my crockpot and let it heat up to clean it if I need too. Everything peels off especially gravy. Cooking spray has a propellant in them. They don’t usually tell you that.

The potatoes would have been delicious in the egg bake but I would have fried them up on the stove for about 7 minutes first so they become soft! I love crusty Dutch oven bread! I’ll do that next time Thanks for the idea :-)
Hi Julia. You amaze me with these delicious cheap meals. Another tip would be to buy a rotisserie chicken instead of raw. It's about the same price and no cooking involved and you still have the carcass for making your broth. Hi Sweet Brinley! One kitchen tip I have that is amazingly smart is if you have a potato press for making mashed potatoes (one that looks a lot like your garlic press but way bigger), use it to squeeze out the liquid from frozen spinach. I also use mine for squeezing out tuna juice when I open a can or pouch of tuna. I can't stand a soupy tuna salad. This eliminates that. I also really like canned spinach, so I use the press for that as well. It's just a thought/tip if you have one of these gadgets. Bye sweetheart. Good meal ideas. Traditional enchiladas are made with corn tortillas. They cost $1.60 per 80 count. Just dip in hot oil or sauce to soften.

This is the kind of shopping & cooking I love to see women and men doing for their family when time's are tough. It's amazing just how far you can stretch a couple dollars when you absolutely have no other choice. You should always be using pantry staples as the majority of households have the basics and keep them on hand.

I grew up in a financially struggling vegetarian family, and I watched my grandmother perform miracles with few ingredients. One of my favorites was her savory oatmeal "meatloaf" made with eggs, onions and sage.
