Eggplants with potatoes and feta
We present to you the ultimate summer recipe! Eggplants with potatoes and feta in the oven. The recipe includes simple ingredients that you have in your kitchen. This is my favorite dish with an amazing taste!

RECIPES:
Ingredients
5 eggplants
Salt
Olive oil
5-6 potatoes
For the sauce
Olive oil
3 onions
2 cloves of garlic
2 tomatoes
200 ml tomato sauce
Oregano
Salt Pepper
1 beef stock cube
Parsley chopped
Slice
Yellow cheese
Method
We start our recipe by cutting the eggplants into slices and leaving them for 30 minutes in water with enough water and salt.
After letting them cool down, place them on a baking tray with non-stick paper. Then sprinkle with salt, olive oil and bake at 200 degrees Celsius, on the resistances, until they are soft.
We continue by cleaning and slicing the potatoes.
We also place them on a baking sheet with non-stick paper, sprinkle with a little salt, olive oil and also bake at 200 degrees Celsius, until they are golden brown.
Then, fry the chopped onions and garlic in hot olive oil.
When they turn brown, add the chopped tomatoes, the sauce, oregano, salt, pepper, the cube and cook until the sauce becomes honeyed.
When our sauce is ready, then add the parsley and mix.
In the large kitchen pan, lay the eggplants and the potatoes on top.
Spread the sauce, feta cheese and grated yellow cheese, as shown in the video.
Finally, bake at 200 degrees Celsius, on the heating elements, until golden brown.
