Eggplants cooked in the oven with mashed potatoes and minced meat - GOLDEN RECIPES

    Today we prepare a Sunday dish with eggplants cooked in the oven with velvety mashed potatoes and of course ground beef. Flavors that combine harmoniously with each other while it is a very satisfying dish!

    RECIPES:
    Ingredients
    1 kg of eggplants
    Salt
    Olive oil
    2 onions
    Parsley
    1 kg of ground beef
    2 tomatoes
    Salt Pepper
    6 potatoes
    100 g of butter
    Salt
    Nutmeg
    150 ml of milk
    200 g yellow cheese
    Method
    Clean and cut the eggplants into slices.
    Then, put them in water with salt and leave them for 30 minutes.
    Then, drain them and bake them in a pan with non-stick paper, adding salt and olive oil, at 200 degrees Celsius, on the resistances, until they are soft.
    Continue and chop the onion, parsley and tomatoes.
    Fry the onion in hot olive oil. When the onion turns brown, add and roast the minced meat well.
    Along the way, add the tomatoes, salt, pepper, parsley and cook until our ingredients lose their liquid.
    At the same time, boil the potatoes and melt them while they are hot.
    Add the butter, salt, nutmeg and milk.
    Then, spread the aubergines in a 40 cm pan, in which we have put a little oil.
    Spread the minced meat on top and the mashed potatoes on top, as shown in the video of the recipe.
    Finally, sprinkle with grated yellow cheese and bake at 200 degrees Celsius on the heating elements until our food is golden brown.
