Yes. Have you seen my Egusi Soup video? I used whole Egusi seeds for that which I ground with a dry mill (shown in the video). I wouldn't buy already ground egusi from the shops because I don't know when it was ground and I want to know the type and the condition of the egusi that I'm using in my soup lol

Ah, I think I know what you mean, you prefer to savour your food! You can get that satisfaction by chewing some meat and fish as you eat. :))) It is better to cook less yams (quantity) than divide the cooked yams. This is because by the time you finish pounding the first batch, the second batch would have cooled down hence won't produce the most elastic (supple) pounded yam. It is better to pound it when it is still piping hot. :) PS. No muscles were strained while pounding this yam lol
You can find raw yams all over London: Brixton Station, Peckham, Dalston Mkt etc, wherever they sell Nigerian food, you'll find yams there :) It was one of the easiest Nigerian food I to buy during my stay in the South East :)

@RABthefirst mmh ... pounded yam is somewhere between marshed potatoes and cassava fufu. I like it because it is stretchy, lighter and tastier than fufu. The white yams are sweet and gives it a good taste and smell :)

You know I've found a way of making 'pounded yam' with a food processor,and mixing bowl with a dough hook. You cut the yam into small cubes and boil till soft.Then whilst still on the fire,take them out 1 by 1 and put straight in the food processor on high.It will mash down and start to form. If you have a mixing bowl the type used for cake making,add the hook attachment,transfer the yam from the processor and put it on medium speed...viola! It's stretchy,smooth and yummy! It takes about 20mins
This looks so good, gonna try and make this because I'm pretty sure I wont find this any way to buy and try!
If you have a coffee grinder, it's perfect for egusi. I wouldn't advise a hand blender because it is better suited for fleshy ingredients but if all else fails, you can try it and see how it goes. :)

Just found out that my Nigerian tribe is Yoruba, so I am trying out dishes from that region of my heritage. Gotta have pounded yam and jollof rice alongside Efo Riro!
@adukebaby33 Oooh my dear brother has been trying to protect our dear wife from all that pounding and arm exercise ... lol! Yes dear, there's no comparison between the one made with yam flour and the real thing but what can we do? Now you've seen the amount of work involved so you know exactly what you are going in for, not easy but I always focus on the delicous food I'll be eating later :) And no, I did not upload the video for the bitterleaf soup, will do so soon.

Remember this channel is about authentic, grassroots Naija recipes lol I won't be pounding egusi seeds with a mortar though! :D :D That one will be pure suffer suffer. Oh, the aroma of the yams while being pounded is heavenly! Better feeling than the taste of the yam and egusi soup sef!

When you travel to Nigeria, you buy it and take it with you when you go back to your base or you can tell someone that is coming from Nigeria to bring it for you. I guess you can also have a family member buy it and post it to you but it will cost a lot because it weighs so much.

@alj51982 lol ... this is an opportunity to show how we "send down" the pounded yam and I seized it :DD Most people outside Nigeria prepare it with the yam powder but I have received a number of requests to show how to make a stretchy one from raw yams. Mmh $80? That's some money for a mortar. :( Now I got to think hard about your suggestion lol!

No, yams and cassava are not the same. You can't use a blender because the blades will not move and wooden spoon will not work either. A dough mixer will give you better results. The link to how to make Bitterleaf soup is in the description of the video. :)

@ileorin I don't know any online shop where you can buy the hard wood mortar and pestle that is sizeable. I mostly see the tiny marble ones. I bought mine from Nigeria.

I really miss Fufu. So good in hot pepper soup or egusi with goat. Just a perfect meal. I wish there was West African food in the NW states. Nothing in Portland, OR. All Ethiopian restaurants which is alright but completely different food and not near as good as West African. Ghana and Nigeria know whats up.
That almost looks like menudo that you're eating. If you've never tried Menudo, you HAVE to try it. You will love it.
yummmm.....I like the fact how you show how you have to eat it with your hands....and even though I use the powder to make yams I bet it taste way better making it from scratch....I have to try..You should start a website where you can buy kitchen items and spices that you use from back home....???? I need that bowl and our import store charge $80 USA dollars for it....
Wow, I will try this. This is very similar to Yemeni aseeda but this version is eith yam and aseeda is made with flour.

Your question about using a stand mixer such as kitchenaid, cuisinart, etc i s a plausible one. I can confirm that the method does work. I put the boiled yam in the mixer bowl and let the J hook knead them slowly. I find that it works well and allows me to make more pounded yam faster. So give it a try. Hope it works for you.

@TheJacobVoice When you prepare this with potatoes, you'll end up with mashed patotoes dear. White yam contains a lot more starch than potatoes that's why it starts to stretch as soon as you crush the pieces and pound for a bit longer. It does not take long at all. Total pounding time for the one in the video (including when I added water to make it softer) was 8 minutes.

LOL. The "don't laugh" actually made me LOL :D I think kitchenaid with dough hook will help after you've crushed the yam pieces with a blunt object say wooden spatula. I encourage you to try it 'cos I think you may have come up with a fantastic idea! :)

When I was much younger, there were yam pounding machines. I wonder if they still exist. You can search online for those and see if you have any luck.

Just put it in the box you will check in. It is wood so customs in every country should clear it just like they would clear any wooden artwork unless it is infested by ants. But you can confirm with the customs where you live just to be doubly sure.

I've been dying to make real pounded yams for years, but my husband has always discouraged me by saying it's difficult to do. You make it seem so easy so I will try doing it early January. I have to admit that when I make the powered one, it doesn't come out well. Did you upload a video for the bitter leaf soup? I think I missed it.

Yes that's right. I remember that yams used to itch the hell out of me when I was much younger especially the newly harvested yams. I guess they are slowly losing that characteristic lol

Big Sis, did you ever use the National/Panasonic Yam Pounder in Nigeria? That's what we always used to cook and pound the yam back then. Of course, nothing beats the traditional method, but only used the mortar. Too much stress!!!
