As a Chinese American, my biggest gripe with Americanized Chinese food (and honestly most ethnic food in the West) is that most Westerners only see our food as greasy fast take-out. Chinese cuisine is so diverse and rich in history; it’s really a shame that they only care about this kind of stuff that has been catered to their palate.

Well, most people think American food is hamburgers and pizza.
Don't stress too much over it. It isn't personal. And when folks are ready to dig deeper, imagine their delight and amazement!

@@Kwijiboi To be fair, most non-Westerners think of White people when they think of American cuisine and White American food IS mostly hamburgers/pizza/casseroles save maybe Pacific and Atlantic fine dining. The rest such as Tex-Mex, Cajun, Creole, etc. is heavily influenced by minority cuisines. We could also bring into the conversation Native American cuisine but the majority of it is lost to history from colonization.

It's not a basic Chinese dish, it's an invented basic Chinese dish.

All dishes need to be invented at some point. Can chinese dishes only be created in China? Are dishes created by the Chinese diaspora outside of China, not to be considered Chinese food? I wouldn't get too fussy about what is and isn't "authentic" Chinese food. As long as it is tasty and people are informed enough to know that this food isn't eaten in China. General Tso may not be popular in China, but don't suffocate the creativity of Chinese abroad in creating new dishes. The next dish may be incredibly tasty to both the West and in China.
