    Problems with Traditional Flour
    By triggering the production of the protein zonulin, gluten causes the tight junctions in the gut to open. Gluten proteins then leak into the bloodstream. Your body responds by making antibodies against these proteins, which have the potential to cross react with thyroid tissue. In other words, the gluten antibodies also can also cause your immune system to attack your thyroid, causing functional hypothyroidism and a slowed metabolic rate.
    Wheat gluten consists of the prolamin gliadin and the glutelin glutenin.
    Prolamins are storage proteins and glutelin is the glue that holds everything together.
    Tissue transglutaminase (TGase) is an enzyme present in all tissues and is involved in many critical body functions. TGase II plays an integral role in the development of celiac disease.
    TGase II is responsible for the deamidation of gliadin in the small intestinal mucosa. Deamidated gliadin becomes more immunogenic, resulting in the production of proinflammatory cytokines.
    This inflammatory response leads to antibodies to TGase II. In early stages of celiac disease, these antibodies can be found in the small intestine, and as the disease progresses, in the serum.
    TGase II antibodies have been shown in numerous studies to interact with the TGase II enzymes in different organs.
    It has also been found that there is a positive correlation between TGase II antibodies and anti-TPO (antithyroperoxidase) antibodies, organ-specific antibodies which attack thyroid tissue.
    This study (Experimental and Clinical Endocrinology & Diabetes) found that a 6-month gluten-free diet improved markers of autoimmune thyroid disease (AITD) in afflicted women. In this study, 34 women with AITD were split into a gluten-free diet or a control group. Titers of antibodies against thyroglobulin (Tg) and thyroid peroxidase (TPO) (which are the precursor to thyroid hormone and the enzyme that converts that precursor into bona fide thyroid hormone, respectively) were measured at the beginning and end of the 6-month intervention. The gluten-free diet was successfully able to decrease Tg and TPO titers, as seen below.

    It's worth noting that coconut flour is actually the cheapest and most effective one. It absorbs much more moisture than almond flour, therefor you should use 4 times less of it (and that's also how you drop the carbohydrate count). Moreover, coconut flour contains mostly saturated fats, therefore it's completely safe for baking, whereas almond flour has a lot of fragile PUFAs that oxidize in high temperatures and also quite a lot of cancerous acrylamide. Coconut for the win!

    I have a recipe book from 1917 called Diabetic Cookery, by Rebecca Oppenheimer. It reads much like a modern keto/low carb cookbook. But she uses some flours we don't have today. Some recipes use Almond flour, but there are two flours not available today, best I can tell. These are "Aleuronat" and "Casoid". Perhaps some entrepreneurial soul could investigate these to see if they are useful in more modern times.

    For everyone who is trying coconut flour for the first time, get ready to rob a farm for all it's eggs and milk and on the way there might aswell buy all the water you can find because that stuff is dryer than the desert. It is very beginner unfriendly for any cooking baking or any other preparation purposes.

      Personally, I don't like the taste of coconut flour. Too much coconut taste. Maybe good for a mug cake but, not good for a wrap.

    Almond flour made me realise how much flour I used to eat, when I tried to eat heaps of almond flour bread etc. After a while I started to get bad gut aches. So had to back off a little. Now I mix it up. Sometimes nut free paleo flours, sometimes low carb breads off the shelf...and sometimes almond!

    For people to know, as a keto recipe developer, remember that almond flour and coconut are not an equal exchange when you see a recipe. They act differently.

      Hi can I ask you something I found a coconut flour which have 16 grams of carbs for 100 grams of flour can I use it for my keto baking or will it kick me out in ketosis?

      @@funnyry8654 does the package say 100g of the flour is 1 serving? The package I use gives each serving 14 grams (2 tablespoons) which is 9 total carbs for that serving.

      @@funnyry8654 You have to subtract the fiber from total carbs to get net carbs. 100 grams of coconut flour has about 8-10 grams of fiber so it would be 6-8 grams of net carbs. If 6-8 grams of net carbs is under your total allowed net carbs then you will stay in ketosis.

    Thank you! My wife and i were forced to use a litle white flour because our cottage cheese pancakes had a really bad texture when only using a mix of almond and coconut flour. We'll try tapioca starch.

      No matter what ratio you mix the coconut flour it is so dry in pancakes no matter how much milk water butter and eggs u dump into it. I wasted so much on that to try to make it remotely edible but the mix was doomed to fail with the dry devil in powder form

    Thanks for doing this video. I've recently retired and my doctor has advised me to shed 10 Kg. I accidentally came across the keto diet about 3 weeks ago but it turns out I am allergic to almond flour. I have tried coconut flour but didn't know about the differences between almond and coconut flour. Now that I'm a little more enlightened about these flours I'll have another go at the keto bread and naan bread.

    one thing I use in place of almond flour is raw, ground macadamia nuts, I have a nut grinder and I pulse it and stir once and when I'm done it's like a dough (probably because of the oil in them) I bake my cakes, cookies and whatnot with it, tastes great and works perfectly for most recipes

    I used to use more almond flour and then I started becoming allergic my favorite flour to use is Lupin flour what are your thoughts on it I know it doesn't raise my blood sugar and it never throws me out of ketosis love the knowledge you share with us

    I see several have already asked about lupin flour but what I'd most like to find out is - since it's purported to be very similar to peanuts, is it also an inflammation-causing ingredient? Would love a video dedicated or at least addressing this popular "new" flour which is being promoted to the keto community as a good alternative flour....

      Lupin beans are a legume like peanuts so should not be consumed if you have an allergy. Their fiber content is higher than carb content though so if you are not allergic it is a great keto alternative.

    you can't use coconut flourand almond flour as a 1 to 1 replacement. Coconut flour is way more absorbent and makes things very very dry.

    Could you do a video on a fasting protocol to follow when you have an oversea trip planned? I know fasting helps fight inflammation and jet lag but a protocol we could follow to prepare for the trip as well as how we can recover upon returning from the trip. Most of us probably won't be fasting while we're overseas as we're there to enjoy but a before and after could make a huge difference.

    When I was a kid I used to love eating casava raw when my mom would be preparing dinner...I never got issues with it but again I don’t think I ate enough amounts of raw casava to have issues. Great video...thank you

    Nut, Seed, and legume flour is full of lectins unless they are sprouted first. Tigernut flour is the winner because it contains alot of fiber, low carb, and a tuber.

    Almonds are also high in oxalates. It's good to have variety. Not recommended to sub coconut for almond 1:1, coconut holds *much* more moisture, so use much less, 1/4-1/3 as much coconut as almond.

    Definitely can’t replace coconut flour for almond flour on a 1:1 ratio though! Your baked goods would be bone dry.

    Fantastic info in the notes re 6 months gluten free dropping eleveted markers for inflammatory immune responses. I wonder if people can recover from coeliac disease? It would be great to have the comparisons at all the same amount say, 100 grams, I level tablespoon, or one metric cup ... or perhaps a series of ones commonly used in cooking.

    Doing keto for someone with leaky gut is difficult as the flours are usually made from nuts and seeds which tend to cause inflammation for someone with leaky gut.
    Tartary buckwheat is probs the best low carb flour but hard to get hold of.
    There are other flours ie lupin but again very likely to have allergies with this if you are allergic to peanuts
    Fonio flour is another one but could not remember whether it is low carb or gluten free.
    Cassava and topiaca can only be used very moderately so almost pointless using them at all if you follow a ketogenic diet.
    Any other ideas would be greatly appreciated ?

    I like using oat fiber. Net carbs 0. Quarter cup to replace high carb items like arrowroot. Or one third cup.take care.

    Some questions I have:
    - How OFTEN & for HOW LONG can we cheat without doing too much damage
    - What foods can we eat
    - Should we still do intermittent fasting during a cheat day
    - How to recover after
    And by cheating I don’t mean higher calories quality food, i mean just poor quality food and sweets.

    I hate coconut flour for baking. I never get the right consistency in my recipes.
    I liek to eat almond flour straight up. You dont necessarily have to bake with it. You can just add water or oil. Add salt or stevia for some variety or eat it plain.

    Almond flour has a lot of poly-unsaturated fatty acids , and - while baking/cooking in high temperature - oxydize very easy! it's mean, that from very healthy product - turns into extremely bad trans fat.

    Isn’t another issue with almond flour due to oxidation that happens when heated? Also, resistant starches tend to lose their benefits when they are cooked. Wonder if Thomas recommends using the flours mostly in no-bake recipes?

      Heated almond flour is extremely unhealthy. It contains a lot of oxidized omega 6's that turn into trans-fats and also a lot of cancerous acrylamide, which is created by heating the proteins present in almonds.

      Daniel thanks for sharing. I wish TD would have discussed this as the primary concern of almond flour if used for baking. The Omega-6 issue he discusses can be balanced by including more Omega-3s from other sources. Oxidized Omega-6’s are the real issue.

    TMI...I am a lazy Keto gal with colitis. What would you recommend as a flour that won’t go right thorough me? I’m new to this and I have done 0 flour in cooking but would love a fried crunch. Thoughts on pork rind crumbs???

    coconut flour is the worst to cook with, it sucks up all the moisture and it turns out dry

      Diet Doctor has a great recipe for keto naan bread with garlic butter that's made with coconut flour, psyllium husks, coconut oil and a few other ingredients. Pretty simple, tasty and great for sandwiches. Aside from that, totally agree with you. 😊

      I baked with it once with almond flour and I almost choked. I swear i will never cook with it again.

      @@jaxfl8945 if you still have some just experiment with it. It requires more moisture but the final product doesn't have to be dry.

    I like almonds, love them, raw, wasabi and soy sauce, salted, sriracha etc. I dont like the almond flour. I want to start by giving up wheat, junk carbs, added sugar and soda, then keto a try, (sooo many people have lost weight on it) but ive GOT to find a decent bread alternative. If i cant have chips cookies crackers i cant give up bread too 😂😂

    I just check on Amazon for Almond flour is about $10 for 2 pounds i'm not sure about the rest of these but to me five dollars a pound is outrageous for flour and the rest of these flours are like that I give up on fried foods

    What about Gluten FREE flour ? Have you heard of Antimo Caputo Gluten Free Pizza Flour ? This is from Italy and it is used by the Neapolitan Pizza cooks to make Pizza, bread and Pastas.

    Can you plz clear some of the doubts about intermittent fasting?
    I think I'm doing wrong..
    1. I don't do the fast on Sunday as I don't go at gym on that day.. So is this okay to give up the fast for 1 day/week?
    2. My 16 hours fasting window is different everyday..someday it is from 8 pm to 12 pm,on another day it is like 10 pm to 2 pm.. So is this a problem for fasting?
    3. I drink 1 cup coffee with 1 spoon coconut oil at 10:30 am during fasting period and before going to the gym.Is the coffee breaking the fast?
    Plz answer. I need your help.

      Just saying coconut oil in coffee does break fast. How much so and for how long is question. But it is calorie so yes.

    So if a person wanted to make keto friendly waffles (That's Waffles, NOT Chaffles) which flour (or combination) should they use? With the end result being the most important factor. (Not nutritiinal value etc)

      Skip all the flours and use a protein powder. Flavored powders like chocolate, vanilla or cinnamon crunch are really good for waffles. Add almond milk or cream, vanilla, an egg some water and some room temp cream cheese to the 'batter'. Could also add in some berries or peanut butter. Throw some bacon on the air fryer to eat with them.
