    Great video, but naaaaaw fam. Ceviche should be soaked in lime juice maximum 30 to 45 minutes. For 12 hours is crazy. 🤯

      Thanks bro💯💯 and idk Works for me. 4 hours is the least I'll do. I guess it's a preference depending on how much you like your fish cooked because i just looked it up. You are right but says more cooking time does no harm just depends on how you like it cooked. I like my fish fully cooked. I don't like it raw in any way. I may try a tuna after I catch it, but that's about it. I really don't like sashimi either or poke 🤷‍♂️ and to be honest I got busy ment to do it for 6 hours 😂

    That hole you are referring to is about 60 feet deep! Didn’t believe it at first, but I saw it in a depth finder a while back.

      Lmao Yes draining the old line juice is a big step forsure I don't like when folks use the old used one lol. The taste so much better when you drain the juice you use too cook with

    Ray, as I said earlier, i'm Surfside/SanLuisPass, Galveston my whole life
    72 now
    when i don't have fresh fish to make ceviche with
    I buy fresh Louisiana- farm raised catfish
    after you try a batch, you'll learn that the texture of catfish
    holds up better than any other fish to the lime juice
    you get a superior piece of fish in your ceviche with catfish
    I loved your complex, many ingredient ceviche
    but i would have had at lest two times
    if not three times that much fish
    ceviche is about the fish
    the things we add, just add to the flavor of the fish ;)

      Got ya. Thanks I make it how I know too. but im always willing to learn. Using more fish will definitely be in my next ceviche. I'm going to try that heb catfish thing forsure also

      save your gafftop - they are the best tasting of all catfish- salt or fresh
      they're just slimy bastards and a pain in the butt to catch and clean
      but the meat kicks ass 👍

    Tip. Cucumbers. Bitter. Chop off about 1/2-3/4 inch off the end. Put it back together and go round and round for a couple seconds. White slime. Do this both ends. 0% bitterness each & every time. Not a joke I promise!! Called "burping" a cucumber. I've even considered using the white slime as a buttering agent to substitute for hops in beer for those of us that home brew. Beer is actually sweet till the hips go in it. This works on cucumbers THAT GOOD. It'll make your ceviche that much better.

    Solid video bubba! My favorite fish for ceviche is sheepshead.. And try leaving it in the lime for two ours and it’s perfect not over cooked or not too raw it’s perfect.

    Do yourself a flavor and use fresh squeezed citrus. It's certainly worth the extra effort, especially if paired with a cold Modelo.

    Man thats the longest time to soak in juice. That fish is completely converted in 2 hr easy. Nice fish. P.M. jetties can be hot, or not 🤙

      Thanks I appreciate ya💯 .. and you are right I looked it up and generally some folks cook it for 30 to 45 min. 4 to 6 is what I usually do. However I got busy and it ended up being almost 12 hours 😂💀 tasted good to me🤷‍♂️. I preferably don't like it raw also to be honest. I actually have eaten ceviche cooked for about 2 hours fresh made on the beach before, but for me it's 4 to 6

      Yes there is different types of structure walls and reefs down there for fish to hang out its safe to not snag a bit a ways down or if your in a boat dropping your bait down

      Forsure just we actually went in serch of black drum with live shrimp so we decided to finish it to see if we can pull some drum along the way.. but some jig woukd have worked out as they were sitting deep

      @@southtexasfishingfam3436 TEMU. Dirt cheap tackle reels etc. Bass long lipped crank bait. They put the eye on the wrong end. Then dressed up the wrong end with white soft plastics tentacles. Diving squid imitation. Amazing how close it looks like a real squid. I haven't tried it yet as I no longer live near the gulf. TEMU WELL WORTH A LOOK at fishing gear. 1/2 price the store. Foreign gizmos not sold in the US too. Small cast net thrown out with a fishing pole? Yea. Video of it working. About 2-2-1/2 foot diameter but this is big for those who "just can't cast a real one." You should do a video with this. I can cast one but MASSIVE aid for fishing world who can't. DO IT!!

      Thanks I appreciate ya ..yes iv been told a hadfull of times already to start a guide service, lol. I keep a close eye on things every year and follow patters aswell as Reed the weather to be able to chose the proper days for them to feed more aswell. I don't always do good it's fishing. But has taken some years to learn the things I know and I still don't know enough in the fishing world I learn every day and every outing. There is no bad days ..just lessons learned the way I see it

      Lmao it's oiled n has new bearings .. it just has Bocca bearing stuff on em causing that. My service dude said it helps to protect em but I don't like the noise ima have him strip it next service

      @@theoneandonlyralph2710 lmao it's oiled and has new bearings but has boca berring stuff on it causing the sound. I'm going to strip it next time I take it in to get serviced .. I'm honestly going to set it down and get me a new tranx that coastal will be for backup after it's serviced again

      Nope we shared the stringer as it was the only one we had handy .. after we split our fish .. I usually keep what ima eat for the week and give the rest of my fish to my grandma or uncle, if they are fine then I give to friends. However I won't keep if I don't need any fish myself at the moment, or if my grandmother doesn't need. Docs requested her to eat more fish if possible. But yea I try not to waste. So I only keep if needed

      😂this is true .. wel to be honest, we were not expecting trout in that deep hole, but that's what was there and bitting. we actually wanted the keeper black drum

      I never said I was a expert at fileting🤷‍♂️ but it works for me 😂 I bealry learned how to cut a throat out of a red lol😂💀 use to always toss em🤦‍♂️.. if there is a method you are willing to share or possibly share a link to a youtube video of a method you might be talking about. Il give it a try💯🤙
