Watching over your shoulder and trying to get extra work out of you but also very kind with lots of food and drinks. I never minded people watching me though, as long as we can chat. I'm already working for a fraction of the labor and because I'm too soft end up dropping the price just to struggle even more because their home is ancient and the client is extra picky.
Don't drop your legit price, it's a habbit of brown parents because that's how works here is done, if you come as foreigners in india then many times locals would try to scam you or charge overprice because they think that you don't know the actual rate. It happens when you book auto, restaurants,hotels.
I'll give you a tip: Just fake it and tell them a price which is about one and a half times higher than the actual rate. The price would eventually turn down to the actual price. I'm an Indian myself and I've seen many Indian workers playing the same trick.

I used to work at a vehicle maintenance center, if an Indian man came in it was always tough because I would give them everything I could but even at the lowest price they still argued. They usually argued against what they need but I couldn’t put something in their car that would destroy the engine.
As a contractor I refuse to do work for them. Just not worth the headache.
