Lol I was gonna comment recommending Fromsoft games before you brought it up since personally I feel like they have the perfect feedback loop. Your skill in these games is something you have to work on and you always feel like you are actively getting better because you are! (At least after you get over the learning curve). I used to really enjoy most competitive games but for the past 4 or so years I feel like they make me go hollow. So yeah you're definitely not alone, a lot of games just feel like they're missing something and I do not really know why.
I know what you mean and kind of idolise it too. I was gonna recommend a dungeon crawler too but you are already playing etrian :D. I'm playing p4g on my handheld, I'd say if you game on pc then might be a goodidea to invest in an handheld idk(don't like steam deck cuz big and heavy), the experience is night and day for me. I've spent 60something hours currently in p4g and didn't feel like I wasted any time of my life. Competitive games can leave this hollow feeling. I started a new game called smt ds2 too yesterday it's fun too I'm new to jrpgs and atlus games in general. I used to only play comp fps games. Laying on my bed with my light handheld and having this laid back dungeon crawling and jrpg experience is very satisfying. I recommend playing persona 4 golden :D
Etrian odyssey look amazing i want to play it eventually. The feelings of fulfillment is something that not a lot of games nowadays really give me. I been really enjoying this game series call trails. Growing up, i play rpgs games so maybe that why it appeal to me
