I made this yesterday for New Year Day and it was a hit with my family. I did make some minor changes such as using a couple tablespoons of. Coconut oil in place of butter in the frosting and substituted coconut oil in place of vegetable oil in the cake. As another mentioned, I used the remaining coconut milk, about 2 tablespoons, in the frosting. It was very delicious. My only concern was the amount of baking powder. Seemed a bit much, but cake came out fine though it rose quite a bit. Will make this again. Thanks for posting.

That cake looks like the world's most comfortable mattress. I don't think you overemphasize the importance of Not Overmixing the batter. When I baked pineapple upside down cake for Christmas, using halfxhalf AP and Cake flour, the cake came out just like a boxed cake mix cake. I was surprised!!
Heya! Yes you should be able to do that with no problems :) just make sure the cake isn't too thick otherwise it may not rise properly. For a slightly thicker cake, you may just need to increase the baking time slightly. I would check at the 30 min mark and then bake more if needed :)

Heya! :) I think fresh coconut milk may be a little too thin (the canned ones usually have a slight thickness to them because of the extra fat), but it still may work fine just can't say for sure as I haven't tried it myself :) I've never used boxed coconut milk before but when you make it, if it has a slightly thicker consistency then it may work better than using fresh coconut milk :)

I found this was fa RV to sweet? But a delicious cake. I made egg it again just using 300gms instead of 332gms. It was really good. I think I’ll use still less sugars, use 4 eggs instead of 3 and cut back on the coconut as the texture of the cake was too crumbly, it’s now a firm favourite!

Why crack the egg directly into the mixture, what if the egg is bad and contaminates the other ingredients. I always have a small bowl and crack one at a time then add it to ingredients. To be safe.
