My mamaw was born in 1908, from Southern Appalachia. She baked these in a pan so that they were all packed in, holding each other up. Shoulder to shoulder, so try baking 4 to 6 together in a high sided pan. If you don't have a wood fire oven, just bake them at about 325 to 350 forever, till the juice runs out and the insides are nearly brown. Yes, the juice will come out and it will all start to caramelize. You cut off the skin with kitchen shears. Don't waste that juice. She made it especially if you didn't feel good, and this stuff is just healthy, wholesome goodness. Slow, steady, upright with the root end on the bottom. If you are fancy for company then put salt meat or bacon on top. But really, not needed. Simple, delicious goodness.
This recipe also works on the smoker....Onion bombs on the smoker is amazing...... Now I want to hear the old song ' I love onions' ....I love the way you ask Anna if you want a slice...
Since making this video several years ago, whole roasted onions have become a staple in our home. My late wife loved them. Hannah is gone off to college now, it’s just my son and I at the house now days. Even so he and I eat roasted onions quite a bit. Oven, air fryer, infrared roaster, grill and smoker. We love them. I saw a video about a year or so ago, put out by Weber Grills, and they threw the onions, directly on the coals, in a kettle. I’ll have to try the direct on the coals trick. The DO ones were good because they were slightly caramelized. But the grilled ones had a smokiness about them.

i've been trying this in the oven and it comes out amazing in there as well, about 1 hour at 400. I've tried both Vidalia and Yellow onions and the flavor is so good.
I suppose that it may be easier to wait for the onions to cool down a bit and if you’re worried about the butter not melting you could just heat up the fat Vs struggling with the hot onion. Going to put 4 onions on my charcoal grill tonight for a nice side dish.

Maybe so! I have considered trying to season my Dutch oven with Liquid Smoke instead of lard or oil. Just seem a waste sometimes to fire up charcoal and eat food with out smoke flavor.
I saw This on Townsends a few months ago. Nothing is easier to cook, so I couldn't find an excuse not to try it. It's up there on the list of top Comfort foods. Mellow, caramelized sweet comfort! Goes amazingly well as part of a Roast Beef dinner or similar type meals. If your oven's running hot cooking something else, chuck an onion in there, you'll be happy you did. Then use it 2-3 nights later when an appropriate food pairing is for dinner. Tip: place on Aluminum foil. Don't place onion directly on a cooking tray, it leaked out onion liquid that burns into black gunk. Almost like that gunk was welded to the tray, and tough to clean off.
I would like to try this, but peel first, cut onion in half, lay on a sheet of foil, add a bit of butter and salt, close up the foil, then bake. Maybe add in a bit of pepper, even some fresh peeled garlic.
Going to try this tonight. I have a bottle of some 'oak smoked tomato' balsamic vinegar. I rarely find a use for it, but I think a drizzle would be delicious on these

As far as ruining a good knife, that is just a twenty year old Paula Deen knife from Walmart. I do however appreciate your admonishment, criticism, discipline, and correction. We do a similar dish with elephant garlic. We baste them with olive oil. Spreads like butter and they taste great.

No I haven’t but they both sound similar. I wrap Walla Wallas in foil with some spg and butter and bake like a potato. They are awesome!
I've tried this recipe just in the oven, using the same time/temp as you would for baked potatoes. I'd recommend cutting-off the root end first.
That is how my Mom made them when I was growing up. So good.

Get your chuck roast browned and then add the whole onions with the liquid? I don't think the skins would hurt, just remove when done.

I cut mine in quarters, place them on the grill skin side down, when they get tender I paint them down with Sweet Baby Ray's......

I use a standard fan oven on high (300-350) for about 45mins - 1hr, so easy.
