  • Ingredients
    200g (7 oz) tapioca starch/flour = 1.6cup
    50g (1.76 oz) rice flour = 1/3 cup
    1 tsp pandan extract (or 5 fresh pandan leaves + 100ml water)
    100g (3.5 oz) peeled mung bean = 1/2 cup
    300 ml water = 1.25 cup
    400ml (14 fl. oz) coconut milk = 1.66 cup
    250g (8.8 oz) sugar = 1.25 cup
    pinch of salt
    **To make the softer cake, the total amount of liquid (coconut milk+ water + pandan juice) should be 800ml
    ** You may need to add a few drops yellow food coloring as the color of mung bean batter is not vibrant enough

    My niece (9 yrs old) wanted to try this recipe because of the pandan used in the recipe. We made this dessert today (she helped quite a bit and her 3 year old sister too). It came out PERFECT. It was soft, chewy and fragrant. Between us and their grandma and grandpa, we finished eating the first of two batch in minutes. My mom said it was better than store-bought! I thought so too.

      Me too, I found her accidentally and I love her Bahn Mi, Vietnamese Baguette , so good ! She also made videos while she went back to Vietnam ! you must check them up ! Helen is a very nice and simple lady ! I love her too !

    Rất ngưỡng mộ Helen, sống ở trời Âu thì việc tìm nguyên liệu để nấu món ăn Việt thì thật không phải dễ, nếu có chăng thì cũng rất mắc. Trong khi mình đang sống trong 1 thành phố đông người Việt thứ 2 ở Mỹ, có tất cả mọi thứ để nấu ăn Vietnam như ngay trên chính nước mình... Vậy mà mình lại không biết nấu ăn!!! lol Cám ơn Helen đã bỏ thời gian và công sức để làm chương trình này. Hy vọng em sẽ tiếp tục cống hiến cho mọi người trên khắp thế giới... Trong đó có mình ^!^

    In Europe you put vanilla to most desserts. In Southeast Asia we use pandan. It does not smell the same, but basically we add pandan to give a pleasant natural aroma to our desserts.

    I have grown up eating these a little bit stale from when my dad bought them when he managed to get out to China town 30 years ago....I can't wait to try these myself and eat them fresh! The mung bean layer was always my favourite part! Thank you! x

    Love your recipes! I’ve made this a few times and it is so good. The last couple of times I made it, however, I noticed it is softer and stickier than usual. Do you know what could cause that?

      it could be the steamer you used. Don't let the water on steamer lid drop into the cakes!

    chị cho em hỏi nếu xài nước cốt lá dứa đổ vô phần bột trắng thì lúc hấp bánh có bị nhão hay mềm quá không hay mình cần phải thêm bột vào

    I don't have tapioca starch, but only tapioca flour. Are they the same? Or can I use them interchangeably?

    They look great! I love these, it'd be difficult to find some ingredient though... I'd probably be better of just buying the cakes, sometimes I see them with purple and green layers.

    E cx lm thử công thức nhưng bánh bị nhão. Là do đổ lớp ko dày hay sao vậy chị?

      khi hấp nếu ko bọc nắp bằng khăn hoặc lau hơi nước liên tục thì nước sẽ nhỏ vào bánh làm nhão. Với lại khi để nguội bánh sẽ khô hơn em nhé

    Hi Helen,
    "To make the softer cake, the total amount of liquid (coconut milk+ water + pandan juice) should be 800ml"....Theo chỉ dẫn này của Helen thì phần liquid nên 800ml nhưng nước là 300ml + 400ml coconut milk...vậy nếu mình dùng pandan extract thì dùng sao? vẫn dùng 1tsp pandan extract rồi thêm nước hoặc coconut milk cho đủ 800ml à? Mình định làm vào ngày mai nên muốn hỏi kỹ lại Helen chút để làm thành công luôn lần đầu hehe...Vì mình muốn bánh dẻo như mình đã được ăn ở VN..Thanks again

    tapioca starch is not as heavy as wheat flour. 1 cup tapioca starch only weighs 125g

    what is 1.6 cups? I know the 1 cups but is the .6? sorry im still confused on that can u tell me

      0.6, 6/10, 3/5... simple math dude... It is about 1/2 cup and 1 tablespoon and 1 teaspoon...

    Hi Helen, cho minh hoi la minh muon an banh da lon ma khong co lop dau xanh, neu vay thi thay lop dau xanh bang lop gi nhi? Vi minh thay o tiem banh mi Vn ben Uc co ban, 1 lop la dua, va 1 lop trang? Neu vay thi recipe co giong nhu banh da lon khong? Thx.
