- Ingredients
200g (7 oz) tapioca starch/flour = 1.6cup
50g (1.76 oz) rice flour = 1/3 cup
1 tsp pandan extract (or 5 fresh pandan leaves + 100ml water)
100g (3.5 oz) peeled mung bean = 1/2 cup
300 ml water = 1.25 cup
400ml (14 fl. oz) coconut milk = 1.66 cup
250g (8.8 oz) sugar = 1.25 cup
pinch of salt
**To make the softer cake, the total amount of liquid (coconut milk+ water + pandan juice) should be 800ml
** You may need to add a few drops yellow food coloring as the color of mung bean batter is not vibrant enough

My niece (9 yrs old) wanted to try this recipe because of the pandan used in the recipe. We made this dessert today (she helped quite a bit and her 3 year old sister too). It came out PERFECT. It was soft, chewy and fragrant. Between us and their grandma and grandpa, we finished eating the first of two batch in minutes. My mom said it was better than store-bought! I thought so too.

Rất ngưỡng mộ Helen, sống ở trời Âu thì việc tìm nguyên liệu để nấu món ăn Việt thì thật không phải dễ, nếu có chăng thì cũng rất mắc. Trong khi mình đang sống trong 1 thành phố đông người Việt thứ 2 ở Mỹ, có tất cả mọi thứ để nấu ăn Vietnam như ngay trên chính nước mình... In Europe you put vanilla to most desserts. In Southeast Asia we use pandan. It does not smell the same, but basically we add pandan to give a pleasant natural aroma to our desserts.
My and my siblings tried this recipe for the first time today (took us about 4 hours). And the cake is just perfectttttttttttttttttt. We got compliments and had fun together. Thank you Helen

Love your recipes! I’ve made this a few times and it is so good. The last couple of times I made it, however, I noticed it is softer and stickier than usual. Do you know what could cause that?
it could be the steamer you used. Don't let the water on steamer lid drop into the cakes!

Hi Helen, I have made banh da lon by following your receipt, It turned out awesome! My question is how do I make it a bit more chewier but still keep the soft ess?
I made it twice and both come out perfect, although I add less sugar the second time.

I don't have tapioca starch, but only tapioca flour. Are they the same? Or can I use them interchangeably?

They look great! I love these, it'd be difficult to find some ingredient though... I'd probably be better of just buying the cakes, sometimes I see them with purple and green layers.

khi hấp nếu ko bọc nắp bằng khăn hoặc lau hơi nước liên tục thì nước sẽ nhỏ vào bánh làm nhão. Với lại khi để nguội bánh sẽ khô hơn em nhé

"To make the softer cake, the total amount of liquid (coconut milk+ water + pandan juice) should be 800ml"....Theo chỉ dẫn này của Helen thì phần liquid nên 800ml nhưng nước là 300ml + 400ml coconut milk...vậy nếu mình dùng pandan extract thì dùng sao? vẫn dùng 1tsp pandan extract rồi thêm nước hoặc coconut milk cho đủ 800ml à? Mình định làm vào ngày mai nên muốn hỏi kỹ lại Helen chút để làm thành công luôn lần đầu hehe...Vì mình muốn bánh dẻo như mình đã được ăn ở VN..Thanks again

tapioca starch is not as heavy as wheat flour. 1 cup tapioca starch only weighs 125g

0.6, 6/10, 3/5... simple math dude... It is about 1/2 cup and 1 tablespoon and 1 teaspoon...
