HAZELNUT MERINGUES
4 egg whites
150g caster sugar
65g ground hazelnuts
85g chopped roasted hazelnuts
8 hazelnut creme-filled wafers, chopped
¾ tsp baking powder
CHOCOLATE HAZELNUT
BUTTERCREAM
280g dark chocolate chips
225g nutella
180g caster sugar
4 egg whites
⅛ tsp cream of tartar
450g butter, soft
¼ tsp salt
CHOCOLATE SPONGES
100g cocoa powder
480g just boiled water
330g plain flour
1 tsp salt
1 ½ tsp bicarbonate of soda
2 tsp baking powder
560g caster sugar
230g unsalted butter, soft
4 eggs
SIMPLE SYRUP
240g water
225g caster sugar

I’m from MKE Wisconsin, where the ice cream flavor, “Blue Moon” originated. It is an incredibly unique flavor. Anyone tried it before?? 😋😋It would be SO cool to see it as a buttercream flavor or a sort of anglaise for one of your AMAZING desserts! Or even in your own time, perhaps try the ice cream flavor you may not have known you needed in life!

It’s a funny thing, many places here have tried to recreate it using all sorts of things, making it a mystery to many locals, but to really capture the classic flavor, Blue Moon uses Almond extract and a hint of Orange.😊 A little coloring is added to turn it iconically sky blue. Marshmallow is a great pairing with it, and if going to an ice cream parlor, a chocolate waffle cone makes it truly heaven. ❤️

What is the reason for sprinkling simple syrup on a sponge? Surely the combination of ingredients making up the cake make it sweet or moist enough? I keep seeing this in baking videos...didn't know about this before & am puzzled as to why it's necessary🤷♀️
the syrup keeps the cake moist. it’s not super sweet with the syrup
I couldn't agree more. Means the recipe for the cake is not the greatest if it bakes dry and needs a simple syrup.

I have bought the book and it is such a beauty! But sadly in a recipe the text is kind of blurry and looking like when you write with a coloured pen and accidently spread the text with your hand before it has dried. That made me a little bit sad. Since I live in sweden it is not something that is easy to return and get a new.
