Lamp Shadow Beef (and so much more!) // Chengdu: City of Gastronomy 16

  • Thin slices of beef are dried, steamed, and deep-fried - making an almost beef jerky-like snack, but we had lamp shadow beef (dēng yǐng niúròu) in style at a nice restaurant that has a reputation for being creative in their cooking. This is not your grandmother’s Sichuan cuisine. The restaurant Dòu Jī Fàn Chǎng Huǒ takes traditional Chinese dishes and puts a twist on them. In this case, they served lamp shadow beef with delicate crepes and a variety of sauces. Fill the crepe with some beef, shredded carrot and cucumber, and then roll it and dip it. It’s similar to Beijing duck, but with a very spicy, almost fabric-like beef.
    It’s made by using a special Sichuan cooking technique called zha shou. The idea is to crisp up the food item by deep-frying it, but to not lose the flavors to the oil.
    Along with the lamp shadow beef, we tried their giant baked baozi stuffed with tender chunks of beef in a curry-laced sauce. The baozi, which is normally a steamed bun, was crispy and solid. Tear a piece off and use it to scoop a generous helping of beef and curry. We also tried some steamed vegetables that came in a buttery broth, and an apple stuffed with a sweet purple sticky rice. Everything was very good.
    HOW TO FIND THIS UNIQUE CHENGDU RESTAURANT
    Dòu Jī Fàn Chǎng Huǒ is a unique Chengdu restaurant that has (斗鸡饭场伙) multiple locations in Chengdu. See them here: ditu.amap.com/s...
    We went to the one at 12 Jiāngxǐ street (成都市武侯区浆洗街12号图腾印象酒店旁 - ditu.amap.com/p..., which is walkable to from Line 1 station Huaxiba (exit A). The menu has large pictures, so it shouldn’t be difficult to order, but Lamp shadow beef is called 灯影牛肉, and the large baozi beef bun is called 包子夹牛肉. Their specialty is chicken feet, so be sure to order some if you are a fan.

      That's tough... I really enjoy a good rou jia mo (you can see a vid I did about them here ruclips.net/video/ssgiAXSiBfs/видео.html) but that's not really Sichuan. Gan guo or dry pot is another favorite. I think it's basically taking the hot pot broth ingredients and cooking a bunch of stuff in it without adding water.

      Are these different names for the same kind of beef?

      Itchy Feet on the Cheap ofc they're all beef, but the way how it's done is each uniquely different. For exp, 灯影牛肉 is more of a dry thin slice, while 翘脚牛肉 is a traditional stew that's tender and herbal.

      Sometimes they'll put space heaters on, but most buildings in China don't have central heating. I'm sitting in my apartment right now and it's about 16 degrees Celsius. Outside it's about 14 degrees.

      east china is divided into north and south by Qinling Huaihe Line, the south part does not have central heating, sichuan is in the south
