In the beginning I mention HDCing for the center of the granny square. It was a mistake, I meant to say Double Crochet. I am not perfect but hopefully that’s all the mistakes done.

for the center of the granny square you say to do half double crochets, and for the colored outline on the granny squares you say to do double crochets, but as far as i can see you are making the same stitch both times in the video.
It was a mistake, you can just follow what I actually do which is DC 😃.

Probably not unless you made more rows in the brim.

How can I change the measurements to fit a toddler?
My best guess would be to use smaller hook for the sunflower and a bigger hook for base color. Because granny squares are hard to tweak, it’s really just finding the right hook size and yarn weight.
when you counted the petals you said 12 however there is 13 spaces for petal, is it 12 or 13?
Should only be 12, skip a stitch if you get 13. Sorry for the miscommunication!

Can u do for newborn?
You can use a smaller weighted yarn and crochet hook to make a smaller size.
This would likely fit a 3 month old.
