Hey y'all. I just came across this video. I loved it. I'm still working on my starter and wanted to see what can be done with the discard. I've been using whole wheat flour, but in the transcript, it says corn flour. Is that correct? Thanks. BTW, Happy Thanksgiving to everyone.
You were adding flour and water to the discard so does this mean you used an active starter because you fed it? Did you wait after adding the flour and water or just use it right away meaning it wasn't active?
When it’s time to feed my starter, I always have discard. So I make my flat bread with my unfed discard instead of throwing it away. And then I feed my starter with flour & water.😊
I keep a constant jar of discard in my fridge. We go through it pretty fast for flat bread and pancakes etc., but you can keep it in there for weeks and it’ll be fine.😊

Mines currently cooking in my Dutch oven. I think I put too much in the pan. It's thick, browned on both side then covered with a lid to finish cooking. Fingers crossed. I have enough SD discard for another one.
Starter in the fridge I give it a good feed I’ll leave it in there for 2-3 weeks without feeding after that When a water layer forms on top, then I feed it again I leave starter on the counter for 3 or 4 days without feeding as well This need to feed daily thought is ridiculous I’ve never had it die Just give it a good feed be it counter or fridge before you use it Been doing it this way for YEARS!!!

No, no corn flour. Stupid transcript lol…Regular flour. Sometimes I use fresh milled, but you can use store bought!☺️
Can you make smaller flatbread and then freeze each one individually?

Yes it’s the sourdough discard when I feed my sourdough. I just use it to make a delicious flat bread.☺️
Doesnt matter how long I cook it for it still doughy in the middle , its very dark/browned so I dont think the pan should be any hotter.
Turn your heat down? Sounds like the outsides cooking way faster than the inside.

Yep, I had to much SD in the pan. Next 2 were thinner. Turned out better.
