Excellent choice to NOT ignore the brakes. I fully support your idea of rebuilding both front calipers; those seals and sticking pistons can't be a good sign. Hoping the runout on the discs is sufficiently thick to allow you to turn them down on a lathe. Would be interesting to find out the price difference and share that on your next video. Those rear drums would make for interesting content, too. I've heard on the interwebs that some auto shops nowadays lack lathes for brake drums. What a scandal, huh? Other than that, I'd just look for leaks just as you proposed to do and make sure the brake hoses were okay. I also foresee a fun video in which you and your wife bled brakes together. Please take care. Mahalo!

Thanks for the suggestion about comparing the price! I have a pressure bleeder for brakes, but maybe I’ll do it the old fashion way with my wife :)

Just a tip for your future videos....try to get right to the point, minimize the talking and make the video more concise. Most people want to spend minimum time watching a video as their ultimate goal is simply to learn about their problem.
