With Myth 6, it's funny you used Metal Harbor from SA2 when one of the cyberspace levels is a recreation of that same level and momentum is carried. I think it might be a game mechanic so you don't go flying off the edge.
I have a theory as to why the light speed dash carries (more) momentum when Sonic's speed level is maxed out. I think the light speed dash's coding (or part of it, at least) might be shared from the air boost, which is also affected by your speed stat (i.e. you keep more of the burst of speed and hang in the air for longer), similar to what was happening in the clips you showed.
The other day, I got to the larger of the two "secret islands" on Rhea by doing nothing more than boosting off of tower #2, circling the left joystick and a ground pound. The ground pound was only because the island is easy to overshoot.
Ian Flynn didn't write the story for Sonic Frontiers; he did the character dialogue. Also, I'd like to see Metal and Sage have a brother-sister relationship if she is to return which is likely considering the post-credits scene. These myth busting videos are always fun to watch, and I hope you make more videos on this game that could tackle some other stuff you could do. :)

So while playing my 100% Sonic Frontiers file (max stats and all challenges completed), I used the light speed dash on a trail of rings and ended up flying forward with a ton of speed at first, then slowing down to the max non-boosting speed. *You can gain speed with the light speed dash in the open world with a high enough speed stat.*

by the way, i think you're holding boost when using the hedgehog space program, to make it the most effective, let go of the boost as soon as you fly up into the air. holding boost halts your progress in the air
