If you use less oil, it would be hard to maintain the temperature. And it would take longer to fry. When the oil temperature is below 350, it would make the food more greasy and less crispy. You can use less oil but please keep in mind that the results may not be as good. I do strain and reuse frying oil if they are lightly used. I don’t fry a lot. When I do, in order to not waste the frying oil, I would plan to make several dishes that require frying in the same meal or prep ahead for later. For example, make egg rolls or fried wontons, fried tofu, or fry an extra batch of this pork and freeze it for another time. For stir fries, fresh oil is used. Long answer. Hope it helps! 😊
