As a native Cantonese, I can tell you the best Chinese food is not found in a fancy expensive restaurant, it is usually look unattractive, little bit run-down(high traffic) but well known locally.
I'm really not sure if you're truly a Chinese, if you're paying on the first meal for your good friend's boy friend, will you bring him to an unattractive restaurant to eat or somewhere that's more presentable in food, decor and service?

True, a Cantonese meal can't truly begin without a soup. Me as a Toisanese in Malaysia, we always have a bowl of soup on the table. It's common for us to have 3 dishes and 1 soup. Of course it doesn't really have to be 3 dishes.
