- Here’s a simple recipe for Egg Biryani:
Ingredients:
For the rice:
2 cups basmati rice
4 cups water
1 bay leaf
2-3 cloves
2-3 green cardamoms
1 cinnamon stick
Salt, to taste
For the egg masala:
6-8 boiled eggs, peeled
2 large onions, thinly sliced
2 tomatoes, chopped
1 tablespoon ginger-garlic paste
2 green chilies, slit
1/4 cup plain yogurt
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala
1/2 teaspoon cumin seeds
2 tablespoons chopped coriander leaves
2 tablespoons oil or ghee
Salt, to taste
For assembling:
1/4 cup fried onions (optional)
2 tablespoons chopped mint leaves
1 tablespoon lemon juice
Saffron strands (optional, soaked in warm milk)
Instructions:
1. Cook the rice:
Rinse the rice thoroughly and soak it for 15-20 minutes.
In a large pot, boil water with bay leaf, cloves, cardamoms, cinnamon stick, and salt.
Add the soaked rice and cook until it’s 70% done. Drain the water and set aside.
2. Prepare the egg masala:
Heat oil or ghee in a large pan. Add cumin seeds, and once they splutter, add sliced onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Cook for a minute until fragrant.
Add chopped tomatoes, salt, red chili powder, turmeric powder, and garam masala. Cook until tomatoes soften and the oil starts separating.
Stir in yogurt and cook for another 2-3 minutes.
Add the boiled eggs and gently mix them with the masala, making sure they are coated with the mixture. Let it cook for 5 minutes on low heat.
