    On removing the fat and reusing it.
    Put the broth in a cool place, to let the fat solidify on the top for easy removal - dont discard it!
    There is a little water in this fat. Get rid of it by boiling the fat at 120 degrees C / 250 degrees F. Water will evaporate, leaving just the fat. Cool fat. Keeps for a month or more in the fridge, forever in the freezer.
    Great for frying stuff, baking etc.

      For easier collection, put cling film on top until it touches the broth. Now the fat will cling to the film and when you pull the film away, the fat will come with.

      If you live in Asia, I suggest chicken feet. Easy to get, cheaper, rich in collagen.

    No no no no... Why the fuck use chicken wings, theyre expensive as hell. Use the chicken carcass or debone chicken thighs. Where im at wings are going for 1.99/lb I understand that back in the day wings were considered garbage but with buffalo wings now they cost more then chicken breast and chicken thigh per pound

    I'm generally a huge fan of everything Bon Appétit does but I'm not crazy about the amount of waste involved in the name of speed here. It's worth roasting a whole chicken and then using the bones and remaining carcass for an overnight broth. If you're this short on time, go to the grocery store.

      you can eat the meat. and the veggies too. I do that (even if I don't use that much meat/vegs)

      I think bones are used in chicken stock not broth , chicken broth is made using meat

      I get your point but Im not going to risk my health for some store bought chiken broth with a sodium content of 900mg per serving. Plus the biproduct can be functional for compost garden.

      I think that's the difference between a stock and a broth. One uses bones and the other use meat.

      Tree And a Duck while im not a chef and havent read comments i can say this. When wings cost double the amount oh thighs you would be crazy to use em for stock. When they were throw away pieces cool but since the advent of wings the price for these "scraps" is unreal. Chicken thigh with more meat are cheaper per lb than wings. Do you get it now?

      Tree And a Duck from your comment sounds like you do fuck all for cooking or you'd know. Chicken wings arent scraps anymore. Theyre hyped up in price. It's like trying to make beef stock with a ribeye steak instead of a shank.

I actually didnt get worked up but I want you to explain your comment since all of the "chefs" offered their advice? Don't have any huh?
