Yes, some bikes do have an o-ring under the steel sleeve but that's easily changed too. You can buy overhaul kits that come with a new seal, o-ring, sleeve and circlip if your bike has one.

I'm assuming this bearing is lubricated by the motor oil in the crankcase but just to be sure am I correct is saying you don't lubricate with any wheel bearing grease? Rookie question I know.
I just picked up a 2000 yz80 for 220$, and the shift shaft is slightly bent down, can I just heat it up with a torch and bend back straight? Or should I just open up the whole case and replace it ?

It's a sealed bearing on the shaft. You could have a bearing going out or the seal is missing.
Which side of the oil seal goes in, the flat side or the grooved?

I would actually replace it cuz after a while it can cause a leak. Depends how bent it is and where it is bent

i got the same problem with my motorcycle, ive noticed that gasoline is leaking at the bottom of the engine.
That sounds a bit odd. Sure it's not just the carb.
Check the floater in the float bowl on the carb and all the gasket seals

No, it's a Blue-Point (Snap-on). I believe HF picks are red.
