Thanks for another excellent video. Can definitely see the resemblance from "Ume" to bannai. The meat chasiu looks like a replica. Probably wanna try the backfat one , it reminds me of Seabura bowl i had in Kyoto! The sinful but yet smooth bowl is perfect for a rainy cold day!
Right on - Umehachi and Bannai def have that same ramen DNA. Sounds like that bowl in Kyoto was a memorable one! Seabura ramen there is quite famous - one of various Kyoto ramen styles.

Did you stay at Azuma Ryokan? I may be wrong, but a lot of the pictures you showed early on in the video was on my exact route to that ryokan. Anyway, love the vids! I can't eat more than one bowl a day but I've been working my way through them all! I went to 3 over the past 3 days but when I went to ippei they were on holiday (understandable because golden week was last week, very smart of them to take the week after golden week is off!) but I think they are open tomorrow so I'm going to try it!

I'm local, so I go to eat as soon as I want to. I would like all foreigners to experience this taste. If you come to Japan, please visit Kitakata and try ramen. I think it's a taste that you probably can't taste in other countries. And while foreigners don't seem to sip noodles, Japanese people sip ramen and eat it. I think it's dirty for foreigners, but ramen is delicious because it's sushi. Please try sipping ramen and eating it.

We have a local chain of Kitakata Ramen here in Southern Cali and it’s straight fire, they make their own noods.

Wow, Kitakata bowl #5 - that pork back fat!! Yeah, I really want to try that. It'd be unlike anything I've had in the UK
It's addictive! Looks heavy and it is to a point...but it's also smooth at the same time and not as heavy as you might expect.
I'd have to try the original. Love all the wavy noodles.
Definitely worth paying ramen respects to the original. Kitakata's want noldles are unmatched.

I actually grew up in Tokyo but love Kitakata for all the reasons you mentioned. I slurp ("sip") my noodles too 😃
