Tip for cheap chewy beef to make it soft and yummie... There is Non Seasoned Meat Tenderizer you buy made of bromelain (from pineapple) that does a great job tenderizing cheaper cuts of beef. Marinate it for half hour or more after its cut avoid any strong looking tough parts. You can do this with steaks too. You can cut it into bigger or smaller pieces, fairly thin.

Great video! Many of the content producers on RUclips attempt to make everything "gourmet" and screw it all up. There are certain things that don't need improvement. You can't make a a "gourmet" hamburger and you shouldn't mess with Asian soul food!
So for red meat do you use egg white and yoke and for white meat use egg white only?? Also are these noodle in the fridge or on the shelf, thanks again for posting amazing tasting videos.
I tried this tonight and it came out the best...I used top round steak. Your tenderizing method did the trick I did however use shaoxing wine in the marinade being it was a round steak and I wanted to make sure it came out tender, otherwise I followed the recipe and it came out great and made a pig of myself. Thanks for sharing your recipes and expertise.
