Delicious jollof rice

  • simple delicious way to make classic Jollof rice:
    Ingredients:
    2 cups long-grain parboiled rice (washed)
    1/4 cup vegetable oil
    1 large onion (chopped)
    1 red bell pepper
    2 tomatoes (or 1 can of diced tomatoes)
    1/4 cup tomato paste
    2 cloves garlic (minced)
    1 tsp ginger (grated)
    1 tsp thyme
    1 tsp curry powder
    1 tsp paprika (optional)
    1/2 tsp white pepper (or to taste)
    2 cups chicken or vegetable broth
    Salt to taste
    1 bay leaf
    1 cup frozen peas and carrots (optional)
    1/2 cup sliced green bell pepper (optional)
    1 tbsp sugar (optional, to balance the acidity)
    Instructions:
    Blend the tomatoes and peppers:
    Blend the red bell pepper, tomatoes, and a little bit of water until smooth. Set aside.
    Cook the onions and spices:
    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown, about 5-7 minutes.
    Add the minced garlic, grated ginger, thyme, curry powder, paprika, and white pepper. Stir for about 2 minutes to allow the spices to bloom.
    Add the tomato mixture:
    Pour in the blended bell pepper and spicy pepper mixture. Add the tomato paste and stir well.
    Let this simmer for 10-15 minutes, stirring occasionally, until the bell peppers mixture thickens and the oil begins to separate from the sauce. This is the base of your Jollof.
    Add the rice:
    Add the washed rice to the pot and stir to coat the rice with the sauce.
    Add the chicken or vegetable broth and bay leaf. Stir to combine. Season with salt to taste.
    Cook the rice:
    Reduce the heat to low, cover the pot with a tight-fitting lid, and let it cook for about 20-25 minutes. Do not stir once the rice is added, as this can make it mushy. Instead, gently shake the pot occasionally.
    If you're adding peas, carrots, or any other veggies, you can add them 2 minutes be
    when the rice is fully cooked.
    Fluff the rice:
    After 25 minutes, check the rice. If it's tender and the liquid is absorbed, remove from heat. Let it sit covered for another 5 minutes.
    Fluff the rice with a fork before serving.
    Serve your Jollof rice with grilled chicken, beef, for a full meal! Enjoy!
