Chicken Dhansak (BIR) Curry House Portion

- In this video I show how to cook the chicken dhansak from my first cookbook, 'The Curry Guy'. Here I down scaled the recipe to a curry house portion to serve one to two people. In my cookbook, the recipe serves four. I hope you enjoy the recipe. Please give it a thumbs up if you do.

I add lentils to lots of curries I make... Helps thicken the sauce however I don't go to the bother of boiling them up separately.. I simply boil the kettle and add the boiling water to maybe one tablespoon full of small sized red split lentils in a mug (fill the mug to top with the water) a few hours before making a curry.. Then I add them fairly early on in the curry making process (about the time you'd add some aqueous tomato puree and/or base sauce).. Gives any curry a more 'rustic/housewives' texture (as some curry houses used to describe it).

I am wondering what kind of pan you're using. I can't seem to find anything similar in Germany. We're currently cooking in a semi-heavy stainless steel pan but it's bare large enough for two people and not very high.

How much difference does a non-stick pan make? We only have those, wondering if we need to find space for a designated curry pan?
I find that the sauce doesn't caramelise around the edges when using non-stick pans. Aluminium or stainless steel are best. It.does add a nice flavour but a non stick pan will still get good results.

That's a difficult one. Different restaurant serve different sauces. If I tried the one you're talking about, I bet I could figure it out. What does it taste like?
Dan Toombs it’s quite smokey in flavour with a little bit of spice, thick consistency, I think there’s a hint of cream in there? Hope that helps
Hi Dan, love the channel. I have a quick question though. How does a BIR make a thick curry sauce. I would love to make this dish but the sauce looks a bit too watery for my liking.
Thank you. That's all down to personal preference. If you want a thicker sauce, just cook it down until it is to your liking. If anyone is reading this and wants a thinner sauce, just add more liquid in the form of base sauce, pineapple juice, pre-cooked chicken stock etc. :-)

@@dewaynemcquillan4592 Lots of dhansaks have pineapple in them. It's not one I normally order when I'm out. But it's a curry that lots of people love with pineapple. I did give alternatives. :-)
Pineapple -yeeeeeeeeeeeeeeeeeeessssss! Try it. Every restaurant near my home has pineapple in its Dhansak and there are loads of Indian/Bangladeshi restaurants in Birmingham (uk)😀.
I love pineapple in Indian curries, will definitely try this one.
