Today I'm making the Penicillin, a modern classic cocktail invented by Sam Ross while he was at Milk & Honey. It's a fantastic cocktail and frequently requested by the audience here, and it's also a rare opportunity to mix with some Scotch. A few things you might want to know if you don't already- Milk & Honey was maybe the epicenter of the cocktail revival of the early 2000's, really kicked off the "speakeasy" thing, and Sam Ross is a legend, so this drink has some serious pedigree.
    Penicillin
.5 oz. or 15 ml. honey syrup
.5 oz. or 15 ml. ginger syrup
.75 oz. or 22 ml. lemon juice
2 oz. or 60 ml. blended Scotch
    Shake & Strain
Float a peaty Islay Scotch over the top
    Garnish with Candy Ginger

Episode review: Personally seeing the tasting notes before seeing what was actually in the drink was a bit confusing; trying to understand your description of the drink was difficult without knowing what was in it. Perhaps if you included the recipe on the screen while you gave the tasting notes at the beginning of the episodes, that would negate the confusion and prove to be a better format. I totally understand how showing the drink at the beginning of the episode can be beneficial though “here’s what to expect from the episode, see if this is the kind of drink that will appeal to you” but for sure I think a recipe shown during that would be huge improvement. As usual though Greg, you never disappoint; all episodes are a pleasure to watch. Keep doing what you do!

    the Arkenstout: freezes player
    Blacklock Lager: gives nightmares
Blackout Stout: knocks you out instantly
Blackreach Blonde: makes you dance uncontrollably
Burning Love: lights you on fucking fire

If my memory serves me correct, the blended scotch is preferably something unpeated (such as Artist’s Blend) so as not to overpower the drink with smoke. Probably my absolute favorite cocktail, but then again I love scotch and I love smoke so no shocker there.

Nope, we shot it backwards. My audience retention chart plummets more or less as soon as I get into the tasting notes, in other words the second the drink is complete, so I wanted to test running it the other way.

Background music took me back to New Orleans and im so here for it!! Especially while fantasizing about either crafting this cocktail myself and/or drinking one in the streets of the Quarter😜🤩 this sounds amazing as I’m both obsessed with ginger and love a good balance of intensity and sour; format for me is fine either way as long as they always end in stumbling mumbling hilarity at the end😉🥃best part! Cheers!

I do a raw ginger syrup for this, grind up the ginger in food processor and then squeeze it out with a nut milk bag. Mix with sugar in a jar to dissolved.
I do this because I also use 10 year Laphroaig for the whole pour instead of the float. It's crazy intense but lemon ginger smoke are all locked in an intense battle for dominance but none prevail for long. The honey is there in the back to soothe the rough edges between the intense blasts of flavor.

know someone who used to work at M&H london there's a few mistakes here that lead to a very different drink. firstly best to use Artist blend for the body of the drink not a peated scotch the original used Asyla but artist blend actual fits a bit better and Aslya is very rare these days. They use Peat Monster and always have for the float. The ginger syrup and this is the biggy needs to be made from ginger juice and sugar not ginger steeped in syrup. this is then premixed with honey syrup 2.1 and the mix is used in equal parts with the lemon juice so the cocktail reads as 40ml AB 20 h&g syrup 20 lemon 10 PM. I thoroughly recommend trying it this way as it really punches other versions out the water.

I think an open with a vague description of the taste would be a nice opener, but I like the full description after the time it takes to make the drink. The opener to intrigue us, but the ingredients to hook us. The final verdict to pay it all off.
