Question: I have now bought and read all your books. This is a question having to do with chia seed. Chia is very high in phytic acid, which robs your body of minerals, and also chia is very low in the corresponding phytase enzyme. This sets the stage for tooth decay and even can contribute toward osteoporosis, and possibly even leaky gut. I get that. But Buckwheat, on the other hand, has less phytic acid, and a LOT of phytase -- enough for both of them. The trick is you have to fresh mill, like with a hand crank corona mill, both flours from fresh seed and use it right away. After you mix your flours, add your liquids, mix and knead, you need to let it enzyme-ferment for a few hours, or overnight in the refrigerator. If you do this, the phytic acid goes away. The Phytase breaks it all down. Again, you have to mill viable seeds and use it right away. It makes a wonderful workable dough, smells and tastes great. It kneads like wheat. You can make/do anything with this dough. My question is this: are there other serious lectins besides phytic acid, in either the chia or buckwheat, that would make it a bad idea to try to exploit this phenomenon? Is this a bad or incomplete idea? Thanks.

I am a chef and started my own cooking channel. I eat similar to a Bear in the wild and hunt for nutrients. I don’t avoid any foods but my diet is mainly vegetarian with meat, fish and dairy around that. Cave men boiled the bones of animals for healthy soup, edwardians worked for their food which involved exercise. I eat lot’s of ginger and never have the flu or stomach problems.

Yes! I have fought the extra 10 pounds of belly fat for many years. After seeing your workings, I am wondering if the spacing of my meals is a good tack. I started the 14 -hour fast. I am avoiding eating from three hours before bedtime until at least 10:am. I am eating my giant-sized meals around noon and around 6pm. In 10 days I have lost 8 pounds. Hi. I had rheumatoid. I was almost in tears when getting out of bed. Specialist put me on methotrexate but liver started to become damaged. Research out of desperation. Long story short. Water fast for 24 days then went on keto diet + OMAD. Now off all medication, asthma is practically gone and weight coming down to almost my teen days weight. Still losing. Hope this helps. Just bought your book Dr Gundry. I'm ready to try your longevity diet. I don't have weight to lose but I deal with chronic inflammation including arthritis, IBS, acid reflux and sinusitis. I also have celiac disease and already eat gluten free. I rarely eat dairy and I easily can practice Intermittent Fasting. Perhaps lectins are the problem. I'll report back. I don't believe anyone can get off from emotional stress as life is and was stressful all the time, nowadays no how different from past But I believe you can reduce your organism's overall stress by eating not stress-to-body-making-foods, and that is key to healthy lifestyle, imo

I'd really like to see a video aimed at people who have Mast Cell Activation Syndrome, Histamine Intolerance, and SIBO. I have these issues, and am not only sensitive to lectins, but also oxalates, FODMAPS, amines/histamines, eggs, and dairy. This leaves out a majority of the important foods on the plant paradox including olives oil, coconut products, nuts, wild-caught fish, eggs, salads, most leafy greens, dark chocolate, and high fodmap veggies such as cauliflower, asparagus, cabbage which are 'what the gut buddies like to eat', with SIBO they just cause pain and histamine reactions. I'd like to see some videos (or books!) for people who have these issues and need to start out on an even more restricted version of the diet and how to reintroduce the foods on your diet without a reaction. My gut definitely feels so much better after cutting lectins! I just wish I could eat more of the wonderful foods on your list.

Dr Gundry, I hear you talk a lot about eating a diet that allows people to be healthy and keep their weight off. How about those of us who have a hard time keeping weight on? This is a topic that rarely gets any coverage. Yet I know many people (women mainly) who just cannot keep weight on. I take in around 2500-3000 cals a day, use enzymes, grass fed protein, eat healthy fats, low sugar, low dairy, low gluten, low histamine/lectins. It seems like I have to bump my carb levels up to gain weight, yet I don’t like the feeling of eating a high carb diet and I don’t want the inflammation that can go with that. I eat about 95% organic, we grow a lot of our own food in our garden too!
Hi Dr. Gundry thanks for your books and knowledge. Eliminating lectins from my diet really took my diet modification to new levels. I’m insulin resistant so I eat no grains, sugars, fruits and many other insulin raising foods. With a modified keto, (low protein) and lectin free diet, my blood sugar on the home meter averages below 100 and I have lost 40 pounds in one year. Im always interested in knowing what is good for me in regards to insulin resistance. My questions are 1. Based on your research, what is the best sweetener- monk, erythritol, stevia, etc. I cannot consume chickory as it makes me pee constantly. 2. Are beets ok to eat or are they just too high in sugar? Yes Dr Gundry I would love to know what causes gray hair and balding as people get older why does aging create gray hair and why does aging affect balding specifically male pattern baldness and why can’t a healthy diet a longevity diet prevent hair from going gray or hair from balding if the genes that make “us” up are such a small part of who we are then why can’t gray hair be preventable or balding or hair loss in any amount be preventable? Dr. Gundry, Thank you for your revolutionary information. I had been following an autoimmune protocol when I came across your first, then second book. I had already given up many of the foods that you discuss. I don't tolerate meat, and was using Quorn and eggs, but then, through blood testing for food sensitivities, discovered that I was sensitive to egg whites (along with wheat, corn, soy, and casein). The only trouble that I have been having with eating AIP, Plant Paradox and vegan is finding sufficient protein. I have been primarily using hemp seeds. I recently got my VIOME microbiome results. It lists foods that I should be eating and foods that I should avoid, as per a customized microbiome analysis of my gut specifically. One of the foods on my absolutely must avoid list is lentils. I'm not a fan of authors making blanket recommendations for all. And as far as longevity goes, my father ate meat everyday and lived to be 96. That's a "longevity paradox" to ponder.
Do you think different blood types makes a difference on how you process different food and also the needs in your diet? Also, I'm barely getting to the plant Paradox after eight months of trying healthy keto and I realize that it's my sleep apnea and financial streas that are keeping to drive the cortisol and that got me to the place of high blood sugar/IR and fatty liver. my interest in the plant Paradox is to heal those things, and, psoriatic arthritis, and possibly, a slow thyroid. the keto way of eating without lots of time to create continual keto recipes and even keto pastas and breads occasionally, and, the equipment to do so, is making the joy in eating more challenging. You asked for a question; well, you being an MD, and besides the eating advice you give, sleeping well, minimal-stress and having a life-loving high spirit for a healthy life, I'd like to know if I may, what is your opinion on the MINIMAL physical activity one of my age or other, (I am 60 years old) should regularly do in order to keep optimal health? I don't mean athletic health but just normal optimal health. For example, I myself have made it a habit of taking contrast showers every morning and all year round; going for a 20 to 40 minutes walk two or three times a week. A brief but high intensity exercise two or three times a week, climbing between 11 to 20 stories of stairs, which get my heart going for a few minutes. And I also alternate between one-day doing push-ups and another doing pull-ups for five days of the week. In addition to eating only once a day, with a one-hour feeding window from Monday to Fridays. On weekends I let go and eat and do whatever. Now, to be honest, I feel that my practices are perfect (at least for me) and I'm even proud of it, however, not being a doctor I'm not so sure if this is as good as I think, maybe I'm overdoing things, or maybe it's not necessary; meaning that If I can get away with only do half of what I do and still be healthy, I'll more than welcome it!! I suppose and hope that many like me, (being rather lazy and reluctant to effort), will benefit from your professional views and advice. and therefore thank you in advance.

I would like to hear more information about weight lifting and recommendations for gaining muscle for women. Are there different tactics when it comes to eating if you're looking to gain muscle? I've always been tiny, so I'm more interested in gaining muscle mass.
I have autoimmune diseases. For about 20 years I’ve had extreme muscle cramps. I can get them in both inner thighs at the same time and am in excruciating pain for about 1/2 hour. I get them in my lower legs and hands as well. I treat the pain with hot, wet towels. Nothing touches these cramps. I’ve tried magnesium of every kind, Quinine and Taurine. Since fine tuning my Keto diet with Omad , I’m suspecting the cramps were caused by lectins. Can you shed some light on this? I got absolutely no help from my rheumatologist or liver specialist. I am almost 68 and plan to live till I’m 120 years old!

Hello Dr. Gundry. I am so excited to have discovered you and your research. I am still trying to figure it all out and how to accomplish a better eating plan for myself and my family. That said there are two things that would be really helpful: The first item is that although I know you did a short video regarding how to follow this plan on a budget, I am super strapped for cash so I am wondering if you could do another more in-depth video of budget options? I guess even if the budget options are not as good as the "real" top line organic options, it would be a way to start getting on track for us. The second item I am curious about is a bit off topic but I thought you might have some insight into it...fluoride. There seems to be SO much information on the internet that states fluoride is not needed and is even bad for us that I am struggling with whether to include it in our families oral care (2 young children 7 and 8). My family thinks I am nuts for even considering a dental regime that doesn't include fluoride but I have heard it messes with our hormones and other stuff. I am pretty much developing a healthy addiction to your videos and feel like finally something that makes sense is being revealed to us. My husband has had a ton of health issues and I remember him saying that he felt like something was attacking his nervous system. A lot of great changes discussed were the some of the problems I had with the plat to paradox diet. A big reason I gave it not much credit. Restricting legumes I knew to be ludicrous whereas restricting animal protein was really the right course of action. instant pot curried lentils have always been a staple for me. Happy to see the reassessment of priories:)
In your book you mention Valter Longo a few times however there is a substantial discrepancy in reference to lectins as dr Longo adds a lot in his menus

Hi. I had rheumatoid. I was almost in tears when getting out of bed. Specialist put me on methotrexate but liver started to become damaged. Research out of desperation. Long story short. Water fast for 24 days then went on keto diet + OMAD. Now off all medication, asthma is practically gone and weight coming down to almost my teen days weight. Still losing. Hope this helps. It does work.

Just bought your book Dr Gundry. I'm ready to try your longevity diet. I don't have weight to lose but I deal with chronic inflammation including arthritis, IBS, acid reflux and sinusitis. I also have celiac disease and already eat gluten free. I rarely eat dairy and I easily can practice Intermittent Fasting. Perhaps lectins are the problem. I'll report back. But I believe you can reduce your organism's overall stress by eating not stress-to-body-making-foods, and that is key to healthy lifestyle, imo

I'd really like to see a video aimed at people who have Mast Cell Activation Syndrome, Histamine Intolerance, and SIBO. I have these issues, and am not only sensitive to lectins, but also oxalates, FODMAPS, amines/histamines, eggs, and dairy. This leaves out a majority of the important foods on the plant paradox including olives oil, coconut products, nuts, wild-caught fish, eggs, salads, most leafy greens, dark chocolate, and high fodmap veggies such as cauliflower, asparagus, cabbage which are 'what the gut buddies like to eat', with SIBO they just cause pain and histamine reactions. I'd like to see some videos (or books!) for people who have these issues and need to start out on an even more restricted version of the diet and how to reintroduce the foods on your diet without a reaction. My gut definitely feels so much better after cutting lectins! I just wish I could eat more of the wonderful foods on your list.

Dr Gundry, I hear you talk a lot about eating a diet that allows people to be healthy and keep their weight off. How about those of us who have a hard time keeping weight on? This is a topic that rarely gets any coverage. Yet I know many people (women mainly) who just cannot keep weight on. I take in around 2500-3000 cals a day, use enzymes, grass fed protein, eat healthy fats, low sugar, low dairy, low gluten, low histamine/lectins. It seems like I have to bump my carb levels up to gain weight, yet I don’t like the feeling of eating a high carb diet and I don’t want the inflammation that can go with that. I eat about 95% organic, we grow a lot of our own food in our garden too!
Hi Dr. Gundry thanks for your books and knowledge. Eliminating lectins from my diet really took my diet modification to new levels. I’m insulin resistant so I eat no grains, sugars, fruits and many other insulin raising foods. With a modified keto, (low protein) and lectin free diet, my blood sugar on the home meter averages below 100 and I have lost 40 pounds in one year. Im always interested in knowing what is good for me in regards to insulin resistance.
My questions are
1. Based on your research, what is the best sweetener- monk, erythritol, stevia, etc. I cannot consume chickory as it makes me pee constantly.
2. Are beets ok to eat or are they just too high in sugar?

Get off foods with added sugar. Stop drinking juice, cut way back on grains. Keep cutting back even more on grains and most fruits...berries are OK.

Yes Dr Gundry I would love to know what causes gray hair and balding as people get older why does aging create gray hair and why does aging affect balding specifically male pattern baldness and why can’t a healthy diet a longevity diet prevent hair from going gray or hair from balding if the genes that make “us” up are such a small part of who we are then why can’t gray hair be preventable or balding or hair loss in any amount be preventable? Thank you for your revolutionary information. I had been following an autoimmune protocol when I came across your first, then second book. I had already given up many of the foods that you discuss. I don't tolerate meat, and was using Quorn and eggs, but then, through blood testing for food sensitivities, discovered that I was sensitive to egg whites (along with wheat, corn, soy, and casein). The only trouble that I have been having with eating AIP, Plant Paradox and vegan is finding sufficient protein. I have been primarily using hemp seeds. Any other suggestions would be greatly appreciated. If you would even do a podcast addressing autoimmune, vegan and PP, that would better amazing!!

Now please help me here can you do a podcast on Candida and as I understand I am not allowed to have mushrooms( my favourite) which are a vegetarian super foods. I am a pescatarian because I do not eat dairy as well as being gluten and grain free but I eat eggs and fish and sorry, lentils kill me and I get doubled up with pain. I want to know what vitamin C should I take? And how much? I smoked for 25 years and quit 20 years ago. I am 60 and I look older. Skin is very saggy. Hashimotos is my auto disease.
I make a sort of bulletproof coffee in the morning: to the coffee I add a teaspoon of MCT oil and two teaspoons of fairly thick, but pourable cream. Hopefully there is minimal insulin response from this mixture. Have I broken my (intermittent) fast?

I recently got my VIOME microbiome results. It lists foods that I should be eating and foods that I should avoid, as per a customized microbiome analysis of my gut specifically. One of the foods on my absolutely must avoid list is lentils. I'm not a fan of authors making blanket recommendations for all. And as far as longevity goes, my father ate meat everyday and lived to be 96. That's a "longevity paradox" to ponder.

Also, I'm barely getting to the plant Paradox after eight months of trying healthy keto and I realize that it's my sleep apnea and financial streas that are keeping to drive the cortisol and that got me to the place of high blood sugar/IR and fatty liver. my interest in the plant Paradox is to heal those things, and, psoriatic arthritis, and possibly, a slow thyroid. the keto way of eating without lots of time to create continual keto recipes and even keto pastas and breads occasionally, and, the equipment to do so, is making the joy in eating more challenging. I am doing intermittent fasting but just the best I can do with that. your schedule and protocol for intermittent fasting sounds really complicated. I don't know how people who are working and trying to survive keep up with things like that. I appreciate that this new book esp. is all towards longevity, which of course I am interested in. My question is with eating things like lentils and other legumes, and sweet potaotes regularly, that are high in carbs can you heal insulin resistance? Also, it's great you find the high polyphenol olive oils that a little goes a long way but just one bottle plus the shipping($50) is expensive! Wish it was more affordable... do you have any sugesstions for an olive oil that might not be quite so concentrated in polyphenols but it's still a good one? And less expensive? I bought your new book and the cook book as well. The recipes look so AMAZING! However, I am very sensitive to dairy in all forms, as well as nuts. Should I just dive in and let my gut catch up? Or how long should I wait before trying to reimplement those foods?
I know it sounds absurd but I do genuinely want to know how bugs work in our diet. I would assume we would eat them when we would find them as hunter gathers? Bugs are really common food in some countries too so im curious about their nutritional value and how it works with us.

You asked for a question; well, you being an MD, and besides the eating advice you give, sleeping well, minimal-stress and having a life-loving high spirit for a healthy life, I'd like to know if I may, what is your opinion on the MINIMAL physical activity one of my age or other, (I am 60 years old) should regularly do in order to keep optimal health? I don't mean athletic health but just normal optimal health. For example, I myself have made it a habit of taking contrast showers every morning and all year round; going for a 20 to 40 minutes walk two or three times a week. A brief but high intensity exercise two or three times a week, climbing between 11 to 20 stories of stairs, which get my heart going for a few minutes. And I also alternate between one-day doing push-ups and another doing pull-ups for five days of the week. In addition to eating only once a day, with a one-hour feeding window from Monday to Fridays. On weekends I let go and eat and do whatever. Now, to be honest, I feel that my practices are perfect (at least for me) and I'm even proud of it, however, not being a doctor I'm not so sure if this is as good as I think, maybe I'm overdoing things, or maybe it's not necessary; meaning that If I can get away with only do half of what I do and still be healthy, I'll more than welcome it!! I suppose and hope that many like me, (being rather lazy and reluctant to effort), will benefit from your professional views and advice. and therefore thank you in advance.

I would like to hear more information about weight lifting and recommendations for gaining muscle for women. Are there different tactics when it comes to eating if you're looking to gain muscle? I've always been tiny, so I'm more interested in gaining muscle mass.
I have autoimmune diseases. For about 20 years I’ve had extreme muscle cramps. I can get them in both inner thighs at the same time and am in excruciating pain for about 1/2 hour. I get them in my lower legs and hands as well. I treat the pain with hot, wet towels. Nothing touches these cramps. I’ve tried magnesium of every kind, Quinine and Taurine. Since fine tuning my Keto diet with Omad , I’m suspecting the cramps were caused by lectins. Can you shed some light on this? I got absolutely no help from my rheumatologist or liver specialist. I am almost 68 and plan to live till I’m 120 years old!

Hello Dr. Gundry. I am so excited to have discovered you and your research. I am still trying to figure it all out and how to accomplish a better eating plan for myself and my family. That said there are two things that would be really helpful: The first item is that although I know you did a short video regarding how to follow this plan on a budget, I am super strapped for cash so I am wondering if you could do another more in-depth video of budget options? I guess even if the budget options are not as good as the "real" top line organic options, it would be a way to start getting on track for us. The second item I am curious about is a bit off topic but I thought you might have some insight into it...fluoride. There seems to be SO much information on the internet that states fluoride is not needed and is even bad for us that I am struggling with whether to include it in our families oral care (2 young children 7 and 8). My family thinks I am nuts for even considering a dental regime that doesn't include fluoride but I have heard it messes with our hormones and other stuff. I am pretty much developing a healthy addiction to your videos and feel like finally something that makes sense is being revealed to us. My husband has had a ton of health issues and I remember him saying that he felt like something was attacking his nervous system. Now to hear how eating certain things is really digesting poisons that could attack our nervous systems is amazing. Anyway, I could go on and on but I have taken enough of your time. A lot of great changes discussed were the some of the problems I had with the plat to paradox diet. A big reason I gave it not much credit. Restricting legumes I knew to be ludicrous whereas restricting animal protein was really the right course of action. instant pot curried lentils have always been a staple for me. Happy to see the reassessment of priories:)
