  • Hey Foodies! Okoy or Ukoy is a Filipino version of deep fried fritters made of vegetables and shrimps. Here's a baked and vegan version, perfect for those who doesn't want a greasy fried vegetables!

    Ingredients:
    3 cups shredded squash
    1 cup shredded carrot
    30g spring onion
    1 tbsp ground flaxseed
    1/4 tsp black pepper
    1 tbsp coconut aminos
    1 tbsp nutritional yeast
    2 tbsp cornstarch
    1 cup chickpea flour
    Baked at 400°F for 20 minutes, flip halfway.
