Another easy lazy way to make enchiladas is to heat up the tortillas in a pan with oil, remove and add your desired filing. Then you just need to roll them and add sauce and cheese (panela type)

this is quite random but lets talk vegan cheese: i personally don't like the one by simply v (which i am pretty sure i spotted u using👀), but i really like the one by vemondo (the lidl brand). i think it tastes less coconut-oil-ish and yeest-ish but more realisically like cheese. idk, maybe some of u guys don't like the simply v either and were looking for a good alternative :D

Pro tip dip the tortillas in the sauce before you fill and roll them and then pour the excess in the top of them when they’re in the pan 😚♥️

amazing job! my mom always dips the tortillas in the sauce before rolling and put some sauce at the bottom of the pan before assembling! just a small tip before you make it again :^)

as a mexican, this was not anywhere what i know as enchiladas.. they're way easier. though, i would love to try this vegan version because it looks pretty interesting. The sauce is pretty close though. :)

You can use beans as the filling.
Yea if I was making them vegetarian or vegan I'd do beans and cheese (of course vegan cheese if making them vegan) or even just plain cheese enchiladas are good ! My favorite are shredded beef ones tho , ugh so yummy !

_but_ sometimes companies don't get their food reviewed by the verifiers who can give the stamp of approval for vegetarian or vegan.
They have to check the and certify that there is no meat/animal products in the place its being produced.
So if they also prepare things with milk/eggs (or meat for veggy) they can't be certified...
