Wow, I never thought I would see pastry strudel being made from scratch again by two women who remind me of my grandmothers! I am 65 and I would help my mom when she made the strudel dough. The room had to be warm and moist so once she started she had to keep moving stretching the dough along to the sides of the table and then filling and wrapping it. Stretching that thin dough took patience and love and Ilona and Erzsébet show it is an art form. I wonder if there are any chefs alive today that make their own strudel dough? We were poor but this is a rich person's dessert when made from the heart.
My great grandparents emigrated from Hungary before the year 1900. So I love seeing anything to do with the people and culture. These ladies are lovely and I would snatch up a cookbook if they had it. ❤
I am as a hungarian-living in Chicago-can't wait to be in Hungary and to eat an amazing Rétes (strudel). They have sweet cherry strudel, sour cherry strudel, cheese strudel(cottage/farm cheese with vanilla and raisin), apricot strudel, apple strudel, poppyseed strudel, cherry with poppyseed strudel, cherry with cheese strudle etc. It taste like haven. Once I was dreaming and waking up middle of the night since I was craving for the taste of studel. Still I can not find here, in Chicago, a real/good studel like in Hungary.
The way those ladies sang made me cry, even though I'm a grown man 33 old almost 2 meters tall... We enjoy the modern life but as these people go away an old world dies along with them.
I watched my O’Mommy & her older sister bake this throughout my childhood & early adult life. What a treasure this was to watch. They make it look easy but that dough is stretched paper-thin & you cannot get a tear or hole in it or all the juices will leak out of the roll. Strudel for 500! AMAZING! My grandmother grew up in this same era. Most of these recipes we dough & fruit-poor man’s meals but what flavor! Thanks for capturing this! Made me smile & cry at the same time.
These two ladies remind me my "nagymama". The simplicity of they are touching, so simple and so brave people. Today's people are very egoistic and foolish, our present world is full of futilities. I was able to understand the Hungarian speech of they, i got tear in my eyes.

Love my Hungarian neighbors. Although Romanian, my grandmother spoke Hungarian, as maybe many Romanians from Western Romania know Hungarian. I learned a few words and phrases from her in Hungarian, a proud people. We have many great recipes from them : )) I think this is the story of many Eastern Europeans. Life was hard under communism. Anything that we had of value, land, house was confiscated from people and given over to the government. That's why socialism/communism ruins nations, societies. The lives of these ladies under communist rule was cruel and hard. I choked up listening to them as I recalled the stories told to me by my Hungarian Grandma many years ago. I admire their spirit as I did my Grandma whom I loved dearly.
this video took me back to my guilds chef training.We had an Austrian chef who taught us this..he told us the other crap as he put it was a jalousie a french version.We had a ball making it and I still do it this way

I used to help my grandmother (in Hungary) to make rétes when I was a kid, all the varieties. Nagymama was a great cook, I think my mother would die for a piece of her Császár rétes ... I try to make it myself now and again and though it’s good and tasty, it gets nowhere near ...

My grandmother was born in Hungary (Budapest), you can see how simple life was over there and how women didn't care about their appearances because they were too busy taking care of their families!
Life is not like this in Budapest now. Neither was it like this ever, really. These traditions mostly stayed in villages or smaller towns sadly..But of course you can see the old times in Budapest too🤗
İ came here to wathc the recepie. However wathcing these old ladies İ ended up thinking that aging is very natural and actually beautiful thing. There is a different aura around them: gentle, calm, present, full with life experience. İt reminded me my own gradmother and all the love i received from her. She would cook for us delicious cakes which no one can recreate.

When l first made the pastry skin they broke easily when l stretched them over the table. Until an experience baker told me my dough need to be soak in oil for about 30 minutes before you stretch it. That solved the problem , it stretches beautifully thereafter. Apple strudel with ice cream is heavenly.
I wish that they would slow down or actually demonstrated closer step by step instructions IE from the Crumbs of dough to the filled already ,perfect to be rolled & bakes Who ever produced that film,Skipped through many steps for the viewers. Their very interesting childhood & family history could have been earlier or separate as Preface to the strudel making steps

That’s the Austrian strudel made with butter, rétes is different (very light and you can taste the fillings e.g. curd or fruit)
This makes me want to get out my Hungarian mother's recipe book and make this too! 😋
