@@felisaxo 👍 Did you know that the most iconic Peruvian dish Lomo Saltado has Chinese influence? It is believed that influence came with the immigrants from Canton or Guangdong that arrived to Peru the mid-1800s. After all it is cooked on a wok and has soy sauce.
Also, Rincon Chami is a local restaurant of more than 40 or 30 years, way before Peruvian food was so popular. Excellent choice to dine at Central. Now you need to go to Maido. I love Edo as well, another Nikkei restaurant with excellent food. There are a ton of excellent restaurants in Lima but that ones that are still on my list are Isolina (Is more family because of the size of the places) and Mayta.
