HELP!!! PLEASE GIVE ME SUGGESTIONS: I made maamoul with other recipe with 50%coarse and 50% fine semolina, ghee and left it overnight as instructed before mixing other incredients and NO AP flour or any flour and they turned out ok but very sandy still. I made half the cookies but I wonder if I could add the AP to other half or even pastry whole wheat flour maybe adding some milk or water so wouldn't be so dry. I don't mind that they are crumbly but too sandy. I used these same molds. The taste is good because I used the rose water and orange blossom water and mahleb but I think it would improve with addition of flour. Am I wrong to add at this point? Thanks in advance. Next time I will try your recipe.
Yes you can add flour to make them. Adding flour will make them Softer, more cake-like; flour adds a slightly chewy texture. Without flour it would be Crumblier,semolina provides a coarser and more buttery texture.
