    I wasn’t paying attention and I put all the dry ingredients together, added the butter and oil, and mixed well. It’s sitting now. I gave the liquid ingredients to add tomorrow. Did I mess this up? Should I start over? Don’t really want to. I can’t wait to taste! Thanks. Great video!

      Semolina, butter and oil need to be combined together and left in fridge for at least 4 hours, I personally keep it in fridge for overnight. Semolina grains MUST absorb all the butter:)

    Rinde 25 galletas
    Ingredientes:
    Para la masa:
    2 tazas (350g) de sémola
    1 taza (125g) de harina para todo uso
    1/4 taza (30g) de maicena
    2/3 taza (87g) de azúcar en polvo
    1 cucharadita de polvo de hornear
    1/4 cucharadita de sal
    1/2 taza + 1 cucharada (130g) de mantequilla
    1/4 taza (60ml) de aceite
    1 cucharadita de extracto de vainilla
    1 cucharadita de agua de rosas (opcional)
    1/4 taza (60ml) de leche
    Para el relleno de dátiles:
    200g de dátiles Medjool
    Canela (opcional)
    Para el relleno de pistacho:
    200g de pistachos
    1/4 taza (50g) de azúcar
    1/2 cucharadita de canela (opcional)
    2 cucharadas (30g) de mantequilla ablandada
    1 cucharadita de agua de rosas (opcional)
    Direcciones:
    00:18 1. Haga la masa: en un tazón grande o en un tazón de una batidora de pie, mezcle la sémola con la mantequilla derretida y el aceite. Mezcle bien, tapar y refrigerar durante al menos 4 horas o toda la noche.
    01:48 2. Saque la masa del frigorífico. Si la masa está demasiado dura, déjela reposar a temperatura ambiente durante 30-60 minutos. Agregue la harina, la maicena, el azúcar en polvo, la sal y el polvo de hornear. Mezcle hasta que esté combinado.
    3. Agregue la leche, el extracto de vainilla, el agua de rosas y mezcle hasta que se forme una masa. Tapar y dejar reposar durante 1 hora. Luego, forme bolitas con la masa y reserve.

Cómo ensamblar las galletas maamoul: Presione una bola de masa hasta darle forma plana, coloque la bola de relleno sobre la masa aplanada, envuelva el relleno con la masa y forme una bola suave. Si está haciendo el maamoul de chocolate, coloque 1-2 cucharaditas de chocolate para untar en el medio.
    7. Presione la masa rellena en un molde maamoul, luego suelte suavemente del molde. Si queda muy pegajosa enharine el molde antes de usar.
    8. Coloque todas las galletas en una bandeja para hornear forrada con papel para horno. Refrigere por 30 minutos.
    9. Precaliente el horno a 180°C (350°F).
    10. Hornee por 20 minutos hasta que las galletas estén ligeramente doradas.
    11. Espolvoree generosamente con azúcar glass. Dejar que se enfríe antes de servir.

    Made this. And it turned out AHMAZING.
    The only change I made was I used Ghee instead of oil and butter.
    One tip to roll the pistachio balls and date balls is to oil your hands with ghee or oil.
    And one thing that helped me was putting the mamoul balls (filled with pistachio and date balls) in fridge for a bit before putting them into moulds to make the designs on top.
    And I dipped the mamoul balls in the flour because coating the mould didn’t do much for me.
    And I coated the sides as well to help it slip out from the mould.
    I hope this helps. My family really loved the cookies. Oh and they do spread out so place them a bit far from each other🤭

      Made it between 20th April 2024 (semolina + ghee) - 22nd the whole process (in the night) - 22nd/23rd baked them around 11:20-11:40pm let them cool off then ate around 12:05 🤭🤓

    Too much of refrigeration but still I made this Ma'amoul recipe. I made Makroudh and Ma'amoul using dates not pistachios. The thing is that your cookies look smooth, mine had cracks after I removed them from the oven. Nevertheless, the taste was good, just couldn't keep the shape in my hand when I was making the biscuits. They started to break apart. I think some combining agent is missing in your recipe. Please do figure it out and do tell me?.

      We have a version of ma'amoul in South East Asia! Here it is known as muih makmur, and the filling is usually homemade sweetened roasted peanut paste. 😋🥜

      Because the nature of semolina is greediness. It absorbs all the butter and it needs time for that.

    The perfect maamoul is combination of both fine and extra fine semolina, adding only orange blossom to the dough and animal ghee, no sugar or cinnamon, or oil, or milk. Mixing The pistachio with rose water, sugar and orange blossom, dates with orange blossom only, no cinnamon or sugar, only mahlab.
