Semolina, butter and oil need to be combined together and left in fridge for at least 4 hours, I personally keep it in fridge for overnight. Semolina grains MUST absorb all the butter:)

Made this. And it turned out AHMAZING. The only change I made was I used Ghee instead of oil and butter. One tip to roll the pistachio balls and date balls is to oil your hands with ghee or oil. And one thing that helped me was putting the mamoul balls (filled with pistachio and date balls) in fridge for a bit before putting them into moulds to make the designs on top. And I dipped the mamoul balls in the flour because coating the mould didn’t do much for me. And I coated the sides as well to help it slip out from the mould. I hope this helps. My family really loved the cookies. Oh and they do spread out so place them a bit far from each other🤭
Made it between 20th April 2024 (semolina + ghee) - 22nd the whole process (in the night) - 22nd/23rd baked them around 11:20-11:40pm let them cool off then ate around 12:05 🤭🤓

Too much of refrigeration but still I made this Ma'amoul recipe. I made Makroudh and Ma'amoul using dates not pistachios. The thing is that your cookies look smooth, mine had cracks after I removed them from the oven. Nevertheless, the taste was good, just couldn't keep the shape in my hand when I was making the biscuits. They started to break apart. I think some combining agent is missing in your recipe. Please do figure it out and do tell me?.

We have a version of ma'amoul in South East Asia! Here it is known as muih makmur, and the filling is usually homemade sweetened roasted peanut paste. 😋🥜

The perfect maamoul is combination of both fine and extra fine semolina, adding only orange blossom to the dough and animal ghee, no sugar or cinnamon, or oil, or milk. Mixing The pistachio with rose water, sugar and orange blossom, dates with orange blossom only, no cinnamon or sugar, only mahlab.
