This is the original and most traditional way to make it. Nowadays they over complicate it but this recipe is authentic and the best.
My Mom used to make these for the holidays. She learned from my Aunt. Oh how I miss these....!

The butter is not separating for me, for some reason. Will it still taste nice if I still use the butter once it gets to room temperature?
You can use ghee instead of going through the process of clarifying butter

Hi! I followed your recipe exactly - (1) my dough was not creamy like yours, didn't stick to the bowl and was hard and broke apart (2) When I made a ball and put the pistachio, the dough cracked (3) I also baked per your recipe and my cookies were soft and chewy and not crisp like yours. What did I do wrong? Help! :)
The dough cracks as it is dry, u should put flour by one cup a time don’t put all
I did Make this cookies at home, I got the highly appreciation from my teacher. The recipe is similar the techquie is the most important especially, the butter need to be really soft and smooth after whisking

Hello! I did your recipe in grams. something wrong with the measurements you posted, they were super sweet . Not good at all.
Try the same ingredients with 1/2 or 3/4 of sugar. I used to make this with my Egyptian grandma’s for decades and I have the measurements somewhere (I misplaced them😢) but I made a small batch of these and they were way too sweet. If you find them too loose add a little flour at a time till they are that nice soft consistency. But you shouldn’t need to
