(A project for my Studio Design class. The focus of this project was not to create a perfectly edited movie, but rather a visual presentation that effectively communicates a complex concept.)

I've baked bread many times, but never knew why I kneaded the dough. What a great visual story. My kids and I enjoyed learning how yeast works and you went beyond! Thanks!

I too have baked with yeast, and I knew that the yeast produces co2, and the co2 makes the dough rise and makes it fluffy. I did know about the gluten holding it together, but I did not understand why. I knew that I had to knead the dough but, again, did not understand why.
With this new understanding, I'm sure that I will be able to notice, and correct, problems in the future.

It’s important to know the how’s and why’s behind what we do, so that when/if it fails we know how to fix it for next time!! This is perfect for my 5 & 6th grade boys!! Short, informative, to the point and not waaaaayyyyyyy too juvenile!! Keep up the good work!!

My sons and I were talking about the Israelite Exodus and why we celebrate the Passover, and my son asked me why they had to eat bread without yeast. I told him it takes time for the bread to rise when we use yeast and of course he wanted to know why, why, and more why lol. This was a wonderful video with excellent visuals and very interesting to watch, even for my 3 year old. I’d love to see more videos like this!

Great video, I thought I wouldn't learn anything, but hey I learnt about gluten. I already knew about the reaction that takes place with yeast and sugar, it is called the krebs cycle, it reduces sugar into alcohol and carbon dioxide to produce energy.
Do you happen to know where can I find info on how much sugar does a gram of yeast can consume and in what time?

I love your video, it is so creative! I am left with a question at the 4 minute mark, why is it important that the CO2 be trapped by the gluten? Is all the CO2 (plus the CO2 that is created by the gluten during the rising process) the reason why the dough rises? Thank you for your time!

thanks! I didn't initially know the answer to your question but I did some digging. Here's what I learned: Yeast will still cause dough to rise even if it's made from gluten free ingredients. It's a slower process and it will not be as "fluffy" but it's still effective.

hi, is there a standard formula on how much yeast you'll use per cup of flour? especially for no-knead doughs that needs to slowly rise for many hours? thanks
for the recipe I'm using in the video, I use one packet (which contains a little over 2 teaspoons) of yeast and about 5-6 cups of flour. A few recipes I've seen for no-knead bread call for between 1/4-1/2 teaspoon of yeast and 2-3 cups of flour.
