    I learned this as a science experiment as a kid (I'm 67 now), and thought it was really cool to be left with this funky elastic ball. I discovered at age 50 that it had been tearing up my GI system. To help with elasticity in gluten-free baking if xantham gum or guar gum bother your gut, add 1.5 to 2.0 tsps of psyllium husks instead. Liquids will activate its elasticity.

      Kiro Percelli there are more people today that are making the discovery. That they have a form of an autoimmune disease, with that being said a lot of people that fall under the autoimmune umbrella are in fact sensitive to gluten as well as dairy. And the side affects of these vary in form for each person. For my mother and myself. We experience extreme fatigue, insomnia, inflammation ect .... But with functional medicine or really understanding the way the gut operates, and what it takes to maintain a healthy gut biome. Many people are getting healthier or living pain free from the harmful affects these foods have on our bodies.

    i was gluten intolerant my whole life without even knowing it, until last year when i went to a GI doctor. i lived my whole life until then bloated, now if i accidentally eat gluten i’m out of service for a day or two. low key miss gluten but it’s not worth the pain

      Natali R. A friend of mine who is also gluten intolerant stopped eating gluten for around 2 weeks, decided to eat a regular sandwich and was vomiting for hours. That was the last straw for her! I already had practice cutting out a food group (found out in 2014 that i’m lactose intolerant) so quitting gluten after all the tests and colonoscopy to rule out celiac was easier for me.

      brigée m I hope your friend is doing better! And I understand her pain, sometimes I eat something that’s accidentally gluten and it’ll be just hours and hours of that. Sometimes my parents are like: it’s not a big deal you can have a little bit, but once I ate a small piece of kinder egg and I couldn’t stomach anything for hours and I was just so nauseated. I’m glad that there are more gluten-friendly alternative coming out these days though! Also, i’m glad to hear that you were able to find out what kind of health issues you were having (excuse me if that’s weird :p), there’s always having that calm after having the storm of not knowing what’s wrong with you but knowing that something’s wrong

    What an awesome video! LOVE it. We're Kansas wheat farmers (Kansas is the #1 wheat growing state in the U.S.), so we know a thing or two about wheat and wheat flour... If you have a question feel free to ask! Some common themes that appear to be popping up in comments are:
    1. Genetically modified wheat - GMO wheat isn't commercially available for wheat farmers to plant and grow... That means there's no GMO wheat in any bread you may pick up!
    2. There's more gluten in modern wheat - Also false! Studies have shown that there is no real measurable difference in heritage wheat varieties and varieties that are more commonly planted today. The main difference in gluten (or protein) content in wheat is environmental factors... If it's hot and the wheat plant gets stressed out, there's a higher percentage of gluten. If it's good growing conditions, there is generally a lower percentage of gluten.
    3. Gluten allergies - Celiac disease is a real AUTOIMMUNE DISEASE that only affects around 1-2% of Americans. When celiacs eat gluten, it's a MAJOR problem for their health... That's why we are investing research dollars into developing a celiac safe variety of wheat. It'll still have gluten, but none of the specific reactors that cause issues with celiac disease. Our researchers are only about 3 years into the project, and it could take as long as an additional 15 years to happen, but it's a project for human health that we are really proud of!

    I was sick for most of my adult life with everything from schizo affective disorder to rheumatoid arthritis, and everything in between. I was very sickly. I had specialists over years and years baffled as to why I was deteriorating....Then one day about 4 years ago I decided to cut gluten out of my diet....turns out gluten was the cause of everything that was ailing me, I have non celiac gluten sensitivity which a lot of docs still don’t recognize. I’m still healing but getting better every day, thank the lord 🙏

      Yeah I don't listen to my doctor anymore either. Best decision of my life. I was fine, minding my own business. Next thing you know he says the lump on my back is cancer and I need to have it surgically removed. I changed my view of health and told myself I don't have cancer, and now I am happily cancer free. That's all you have to do.
      I agree also with your point about not taking advise from people who learned stuff from books. Books! Who needs them? I only listen to people on youtube that talk about holistic healing and an organic lifestyle. Everything else is just big pharma/monsanto/NWO shill talk.

      +Warren Van Niekerk Yes raw vegan is an excellent way of treating physical ailments. If you went to the doctors for that rotor cuff syndrome you would probably be dead by now. It's been proven that they kill more people than they save.
      My friend is a naturopath and he swears by bleach enemas. Just the typical over the counter stuff you find in the grocery store. You could probably benefit from doing those once a week, they are known to work wonders regulating your immune system and relieving joint pain, say from a rotator cuff injury.
      Hope it works for you if you try it, I know it worked for me, and I don't have to pay those stupid doctor bills!

      It's very dense, and gives bread a dry texture. I have to use butter usually. (I have a gluten allergy, but used to eat gluten regularly before diagnosis). Not to mention with pizza it's more of a cracker or pita texture.

    In China we actually separately the gluten and the starch water, and they are made into two different foods. The gluten is steamed and made into 面筋,you can do stir-fry or hotpot or whatever; the starch water is made into a type of semi-translucent noodle 凉皮, add some sauce and hot oil and it becomes a perfect snack for summer. Yummy yummy!

    It's important to remember that you do NOT eat RAW gluten/dough. When it is baked the protein changes again. Then it is not like this rubbery mass as you see in the video. That is why you can digest it when it is baked. Many bread flour packages may warn against eating raw bread dough for this reason I suppose (also it really wouldn't taste good at all lol not like eating raw cookie dough lol)
    Also another note, the texture of the gluten also is different due to the mixing process.
    Bread - kneaded till gluten develops. (If you do not knead bread dough enough it will not rise properly)
    Cake- not overmixed and not kneaded. (The structure of cakes also depends heavily on eggs really. Did you know you can make flourless cakes using eggs? It's quite easy and yummy. )

      No we can't digest gluten. In fact, at the time, people were making their own yeast ( sourdough). It took a week to do it then the bread had to ferment for a whole day. This is when the gluten is getting cut out, for us to digest it. The "modern" yeast has no flour in it, it is a bacteria they will get from some fruits before letting it grow. ( I'm not well aware of this process but that is all I understood)

      @@melissanasser9777 we still make sourdough breads today and other breads which use sour starters (like ciabatta for ex. I’ve even made baguettes using a starter). Using a sour starter doesn’t cut out gluten. If it did, you wouldn’t be able to make the bread. Bread MUST utilize the gluten protein to be made and rise. When you make a sour starter it’s true that ppl often let it set for a good while, but don’t forget you gotta “feed” it which introduces new food for the yeast to eat. Otherwise they would die off with no more food. Adding flour is an easy way to feed a starter. Ppl also often use a starter to make bread and then save a portion of the bread dough and use it as their next starter. When yeast feed they are eating the starch or sugars. So they aren’t eating the gluten.
      There is another process by which you make a dough and let it retard in a cooler for a longer period. This creates a slow fermentation which the yeast feeds slowly. This kind of process has been beneficial to lean doughs like sourdough or baguettes to create more depth of flavor. But again gluten still remains.

    I'm mildly gluten intolerant. I can eat small to medium amounts of gluten, but if I eat too much, I sometimes get constipated or acne or rarely a rash. It used to be worse, now it's better than before. My dad used to be able to eat oysters, but not anymore because he became allergic. Other than gluten, no other food affects me.

    I use all purpose flour for vanilla cakes. I find the texture and flavor more delicious, personally. It does result in a denser cake though.

      Go to a docter especially to an expert like a gastroenterologist and do a checkup.

    you can also buy a literal bag of gluten (bob's redmill brand) at any grocery store.
    Also as a celiac, you can feel gluten... for about 2-3 weeks, trust me. lol

    This is what makes bread taste so delicious. I’m so glad my body is perfectly happy with gluten and it actually calms my heartburn (from consuming dairy and soy). When my tummy goes crazy from other reasons, I need to stick to bread only diet and within a day it goes back to normal.

I was fine for a little bit more than 20 years then I had some financial difficulties and ate A LOT of bread/cakes/cookies/etc (basically everything very cheap, of very bad quality and full of gluten) then I started feeling more and more sick until we discovered I became intolerant. 😔

      @@shizukagozen777 Maybe the problem is not in gluten, but a lot of fast carbs, junk food like cheap bad quality cookies, also too much of bread in the stomach doesn't work very good for anyone. If you "discovered" such a serious illness, contact a doctor. Eating a lot of bread is not healthy for everyone. Gluten intolerance is a serious illness with serious feedback from body that can be fatal, don't mistake it from consequences of just doing something too much.

      LOL I didn't make up everything, don't worry. Yes, I saw a doctor, and yes, it's a gluten intolerance, not allergy (thanks God). I eat gluten free since that day, it's been almost 5 years now, and I have tried 3 or 4 times to eat extremely small quantities of gluten, for example in some chocolate, because I kept hearing that after a while, somehow the body heals and it's possible again to eat a bit of gluten but it still makes me sick so I think I will never be able to eat normal things like I used to do.
      Hmmm, yes, I know it's now healthy but when you have no money, it's better to eat sandwiches, noodles and cookies than starving to death. I didn't have the choice, you know. 😐

      Heat hardens the protein just like how eggs harden with heat. Or how unbaked dough is flexible but baked goods are sturdy.
      Heat tends to break down compounds like protein by thermolysis. Which makes them easier for us to digest.

    I thought gluten-free was just a fad. I used to be exhausted all the time, but then gave up gluten and I’m wide awake 😳 Update: my nephew kept falling asleep, got tested by a private doctor..turns out he’s gluten intolerant and no longer falls asleep.

      The same thing happened to me when I stopped eating gluten and flour... I feel a lot better, not tired anymore, my respiratory allergies got a lot better, I feel even emotionally better. And, of course, I lost some weight.
