If salmon is the king of fish, sea bass is the prince. Tastiest fish in the sea, in my opinion, and it takes flavour on like nothing else, lime, chilli, ginger, lemon, butter, you name it. Love Gennaro, and love his recipes

+Colin Hirons I'm sure you could do it with a couple of other white fish fillets too. The only thing I'd be worried about are the carrots. Six minutes in poaching liquor doesn't seem long enough unless he already par boiled them.
+Man Beadle A whole fish with head and bones has much more flavour than a fish filet. Also, the carrots are the way Gennaro wants them, but when I stir fry with carrots under 5 minutes, they are cut thin enough to be tender. Try it😋
+Pietro Erzegovesi It's Jamie's own brand of wine he produces in Sicillia. It's really good actually. Normally it's in a bottle but in his restaurants they have boxes because it's easier to handle.

+MdK I get why you'd say that, but I doubt it's the same as 2 dollar crappy supermarket wine, it's actually Jamie's italian wine and if I'm not mistaken they also serve it in their restaurants, i guess they just use cartons to keep glass out of the kitchen as it's kind of risky while handling food.

If you had a whole fish in your fridge, it'd be spoiled by now. Always buy fresh fish and use the same day.

imo this one is better if you put all the ingredients in a parchment paper seal it and cook it in the oven about 190 degree C for 35-40 mins
+pwntmatch 35-40 mins it's too much for that little seabass, you should consider 20 mins for each half kg. as a rule
But then it wouldn't have this 'pan-fried' flavor.

Catch on fire. Wine has alcohol. basically put alcohol over oil over heat and BOOM!

Cooking removes the alcohol anyway and alcohol free wine does not taste the same at all
