Chicken Thigh Marinade -
450g (15.8oz) - Boneless & Skinless Chicken Thigh, Sliced Into Strips
1 Tbsp (20ml) - Soy Sauce
1 Tbsp (20ml) - Shaoxing WIne
1 tsp (5ml) - Sesame Oil
1 Tbsp (20g) - Granulated Sugar
Stir-Fry -
3 Tbsp (60ml) - Peanut Oil
1 - Shallot or Brown (Yellow) Onion, Diced
30g (1.6oz) - Ginger, Peeled & Julienned
4 - Garlic Cloves, Thinly Sliced
450g (15.8oz) - Fresh Thin Hokkien Noodles
2 Tbsp (40ml) - Soy Sauce
2 Tbsp (40ml) - Shaoxing Wine
1 Tbsp (20ml) - Malt Vinegar
1 tsp (5ml) - Sesame Oil
1 Tbsp (20g) - Granulated Sugar
3 - Spring Onions (Scallions), Roots Thinly Sliced & Stems Julienned
90g (3.01oz) - Fresh Bean Sprouts
1 - Long Red Chilli, Thinly Sliced (Optional)

That's the first time I've seen green onions julienned like that for a garnish. The only thing I would change is that I would add more veggies to make this a complete meal. Thanks for the tip!

Nice Stirfry recipe, do something similar but will try it that way ( haven't added sugar) to give that a go. Just love the way stirfrys are a race to the finish line once the first ingredient goes in

Look's fantastic! I cook stir fry's regularly at home and one ingredient i would advise people to go easy on is Sesame oil. Man that stuff is strong and to much can ruin your dish. Keep up the good work dude.

This looks really delicious. Reminds me a similar dish I used to eat in my college. They use peanut sauce to coat the noodles, and I always ask for some chili garlic so it's sweet and spicy. Thanks for this recipe, chef!

you need to try adding baking powder to your chicken and leave it to marinate for 20 minutes. it makes the chicken very tender
I believe the chicken is tender enough and it isn’t required but it’s a good tip 😊
