hk both version can order. We commonly drink with evaporated milk, which is similar to British style. We can also order condensed milk version called 茶走/茶走甜 which is likely South east asia version.
The Hong Kong milk tea from Hong Kong don’t use condensed milk. But you can request to add it. But usually don’t used it. Cafés from oversea that used condensed milk are not authentic

I am in the US too. You can get all these loose leaf tea at Amazon. I use lipton orange pekoe leaf and others combinations for milk tea.

看了那麼多視頻教冲港式奶茶,唯獨這個視頻最好,公開真正秘方,放雞蛋殼,幾十年前香港師傅大排檔就有放雞蛋殼這招,解釋什麼茶葉是中粗幼。希望能跟這位師傅衝出一杯真正的香港港式奶茶😅
個人意見,撞茶目的是要使茶葉受熱和吸收水分更平均,至於增加順滑度,應該是不要過度高溫回溫,還有當最後吊茶時水分也會蒸發,茶的濃度也會提高,就是所謂的「厚身」,口味上也會變得順滑

回溫作用是什麼?
回溫作用是把茶葉的味道更加好的發揮出來,回溫的時候會加蓋,我們行內用的時候把蓋去掉,因為坐好的茶加蓋茶會容易澀

由細到大我只用Lipton茶包沖,一直都沖唔到茶仔隻味,加到三個茶包一杯都仲差好遠,原來要加多兩隻茶葉,仲要有拉茶功夫。
三種茶葉都有佢嘅特色同作用~拉茶同埋要煲一煲d 茶都好重要架!
三種茶可以中和不同層次的味道,所以單一的茶葉冲唔茶餐廳個味,當然我都係自己估嘅😜

來回撞茶嘅目的係希望利用動力把茶的餘韻撞出來,並將空氣帶入茶裡,令茶口感更滑~~
坊間所有嘅港式奶茶做法都需要有撞茶呢個步驟!我都有研究過並且節錄其中一篇比你參考!

D茶葉係要一早溝好先,唔係沖先至溝,用時候要再返混動吓。係冇咩技術,但佢真係有好多錯處囉!
如果你知用邊款茶膽可以分享下架, 我自己都不斷溝緊唔同既ceylon茶來試, 重未搵到。 我唔止用3種, 用上5-6種茶, 始終未搵到最理想效果。
Ceylon tea not strong enough.. you should get black Indian tea leaves not tea bag and mix together. Lipton give the shiny gold color
