The water bottle doesn't trick your brain at all, most of what we taste I just the smell of what you are consuming, since water doesn't have a smell, if you drink water and smell something else like an apple, that water will taste more like an apple because of how the human nose works, what Noah is thinking of is the placebo effect which would happen if he added a tasteless powder to the water that said it was apple flavor and then when he drank it, he should taste apple, what he is describing here is just the concept of taste
