Guga Foods can you make it but use chicken instead?
I always appreciate Guga's experimental approach to cooking. Even tried-and-true dishes get boring after awhile. After cooking hundreds of turkeys the traditional way (with great results), I am determined to try something different this year. I have watched many videos of cooks de-boning a whole turkey, but they all roll it up into a cylindrical shape. Only Guga makes it round, resembling a pumpkin or gourd, which is eminently appropriate for the season. The cylindrical rolls put some (much) of the skin on the inside of the roll, where it will not get crispy. With all poultry, there is nothing better than crispy skin, and nothing nastier than undercooked flabby skin. Guga's roundish shape seems to maximize outward skin exposure, allowing all the skin to get crispy. For the visual effects, as well as the crispy skin ratio, I will attempt to replicate Guga's presentation. Since I think most discerning diners prefer dark meat, I am also contemplating stuffing my bird with a couple extra de-boned turkey legs or thighs, thus ensuring a higher ratio of dark meat.

Guga u treat the meat delicately . Slow and careful movement, clean work surface. Scott rea, an original favorite of mine too, alchemy type of cooking, unreal . Men and meat is a super combination.

In Germany we don't have so much turkey but rather goose. Traditionally we cook the goose for 12-16 hours in the oven - which should not be too different from traditionally cooked turkey. This year I will try out making it sous vide. Maybe you make a video on goose as well?! I would love to see how you approach the challenge of cooking goose.
Don't "mash" the potatoes before putting them in, just boil the pieces a LITTLE bit before putting them in the turkey.

I wonder how well this would turn out using my 24 hour fried turkey brine? I do a 24 hour brine on a turkey with 1-gallon of Louisiana Hot Sauce, 15-Bay Leaves, 10-Cloves of Garlic, 1- Large Onion (cut into eight's), and about 1/2 cup of lemon or lime juice. After the 24 hour brine, I pull the turkey out and set it to drain all the brine off (no rinsing), and then use Slap Yo Mama Cajun seasoning on the skin, and let the seasoning dry the skin out as the turkey rests in the fridge for another 2-5 hours to get it ready to fry. 350 on the oil and 165 on the target temp, and a 30 minute rest period.
Once fried, the heat from the hot sauce burns off leaving amazing flavor, and the juiciest white meat you've ever had!
I would imagine over the grill would produce similar results? Wanna give it a try?

Dont do thanksgiving, but this is a great idea for Christmas, its so much better to get a turkey crown or something similiar. Really loving your videos.

Thank you so much for this video! I deboned a 12-lb turkey this year (leaving the legs and wings so it still looked mostly like a bird) and stuffed it with my family's traditional stuffing and it worked out perfectly. I did 5.5 hours at 225F basting every 30 min and it was great. It really wasn't that hard even. My wife even agreed to let me do something crazier next year.

you guys always use regular brush, meanwhile Gordon Ramsay always use some kind of herb brush. Sometimes I wonder if it actually make differences, because it's just used as a brush, seems like a waste of herbs. But, there's no way Gordon Ramsay did something useless like that. Can you guys test the herb brush?
I second this. Blind taste test on herb brush vs. regular silicone brush.
Afcourse it makes no difrence 😂 silicon is more easy to clean tho.

If you just add those herbs to the mix, it would be no different using a brush I would imagine.

You are really good in debone the turkey, but personally i'm against with deboning meet,because to me it's like removing someting that give flavor, said like that it look like a bullshit but you can check it just tasting deboned prosciutto and the normal one,try it!

Me and my family hate turkey because it always takes forever to cook and comes out more dry compared to any other type of meat. I'd love it if supermarkets sold turkey pre deboned. The ability to season the entire interior like he did makes me feel like it will carry its flavor way better.
I recommend looking into injectors. They aren't the best option but they will let you get some seasoning inside the meat if the flavor isn't penetrating
I believe that's call a Cushion. Scott Rea makes them too. You should check out his channel for cool butcher ideas. I'd love to see the Guga spin on some of his creations.

If I tried to debone a turkey I would probably end up with ground turkey.
i'm thinking i might start small and try this with a turkey breast first...still haven't tried spatchcocking a chicken yet, never even crossed my mind to debone an entire turkey!
