KELEWELE (Spiced Fried Plantain) is a popular street food in Ghana, enjoyed by the masses! I have 2 kelewele recipes, baked version and fried version. In this video, I’ll show how I make my fried version. Enjoy with roasted peanuts!
INGREDIENTS:
4 ripened plantains (avoid over ripened as it will absorb a lot of oil while frying)
1/4 medium whit onion (any onion works)
thumb size frozen ginger
1/4 tsp of crushed black pepper
1/2 tsp salt
5 cloves of whentia (grains of selim)
3 calabash nutmeg (substitute with regular, but use only 1/4 of it)
1 cardamom pod
6 roasted dry red chilis ( please adjust amount to desired heat level)
4 cups of oil for deep frying.

Hey coach, you're soooooo fabulous. God bless you Mama.
Thank you and God bless you too Sonia Bamba😘 thank you😘
I really love this. I noticed you use black pepper a lot in your recipes. Pls what does black pepper and cardamon do in meals?
Yes, you made a great observation dear! Black pepper is a spice that gives a warmth to savory dishes across the board without being overpowering! I love how versatile it can be! I’ve even seen it incorporated in sweet dishes such desserts, fruits, etc! It’s comparable and just as needed as salt, almost like a seasoning with a mild kick! Cardamom is also a warm spice used in moderation as it can be overpowering, it’s very fragrant and completiments other spices typically incorporated in dishes with curry flavors! It has an intense sweet aroma that elevates bothe savory and sweet dishes. Thank you for such a great question!

Another deliciousness from Auntie Nanaba (was there!) Question, can you use cardamom powder instead of the pod and what's the measurement? Thanks!
P/S, I just realized I'm the only guy representing, lol. I love cooking for my family.
You certainly may use the powder and please measure1/4 of teaspoon as the powder form has less intensity in terms of flavor. I see you brother! Need my brothers in the house! Lol😂🙏🏿Thank you so much!!!!!

Thanks very much
Thank u sis 💙
Nanaaaba please how long do I let it sit before I turn it?
Until it starts changing color or starts burning
Dear Nanaaba, i know you love plantain so you have to try Haitian green plantain Fried. They call it in french "bananes pesées". I love this recipe. Let me know, you will love it.
good
So are plantains just bananas? And should it be slightly raw when using it or fully ripe
Plantains are not bananas, although they’re from same family. Yes the plantains need to be yellow ripened for this recipe.
I’m curious about that tool you used to grind the spices please. What is it called? A regular grinder?
It's a spice or coffee grinder
Thank you!!
Thank you also very much!!
I had this in Ghana and it was soooo good. I tried making it but whenever i fried them they always get soggy instead of crunchy, maybe I use the wrong oil.
Any neutral oil will do. Just make sure oil is hot enough.

Nice
Erhmm. What can I substitute cardamon with?
A pinch of cinnamon and regular nutmeg.
Lovely recipe, though I would have to omit the peanuts.
Thanks for the compliment! Oh yes, the peanuts, totally optional.
@@NanaabasKitchen : You are most welcome.
@@VisyVisyTV but please give it a try, it adds a heavenly flavour to the kelewele....trust me. Unless you are allergic that is.
@@isaacdarko3359 :Not allergic. Don't like it, though I do eat it, sometimes. Tell you what I will try when the opportunity presents itself.
