concordo ma troppa roba, specialmente sulla margherita, e troppo cotta sia il cornicione che il condimento tipo le fette di salame. Il basilico cotto prende d'amaro ma comunque la base c'è e sembra migliore di tante pizze delle nostre parrti.

@@MauroC74 Caseificio Pontecorvo e c'è scritto filone di bufala. Perchè la mischi poi con le ovoline coreane ? Comunque la seconda, secondo me, ha il cornicione bruciato e il salame pure. Il forno è troppo alto per la fiamma e non ancora omogeneo. Credo che queste pizze le abbia fatte per dimostrazione quando i tronchi erano accesi nel pomeriggio per portare il forno a temperatura ed ha avvicinato troppo la pizza alla fiamma. C'è un tornado di fiamme dentro quel forno. La sera con il forno a temperatura omogenea e senza quelle fiammone avrà prodotto pizze migliori.

(West Cork Irish Buffalo Mozzarella) Reading on various forum from italian resident in ireland, it seems that these mozzarelle are fairly good. even tho these latters are most probably made with mixed milk from cow and buffalo. Now if you want a good italian producer, i read online very good review on "Garofalo" products shipped in ireland. Here they are well known. In any case sorry for may broken english, i hope i have been helpful.

The 3rd pizza looks amazing! The dough looks amazing! When your using a nepal dough like this, it should never be covered with that amount of tomato sauce. It looks Increible and I like the way that you are kissing the flame with the pizza. The last one is by far the best one, you should finish with the chili oil cause you want the dough as dry as possbile when it's making contact with the flame. They cherry tomatoes can go on the pizza after the dough has settled in the oven cause they leave behind so much water that u do not want it making contact with the nepalian dough. The center of the pizza will not be finished if you have to much water content. And you never want that amount of stuff on your pizza cause it will make the dough chewy instead of crispy. But it all look's amazing and I bet all of them tastes awesome.. Just a Swedish/italian kid that has been raised on nepal dough ;S
yes i think you are right. The Water content looks way too much with that amount of toppings on the pizza. it looks good but crust will taste chewy i bet.

I’m Italian and I have to say: VERY GOOD! The only thing it’s done different is the flour mixing process. We first add the flour and THEN we add the water and lastly we add the salt and a small amount of olive oil to the composed.

The main addition of Italian pizzas is that they use fresh products, I have never seen a Sicilian open a can of processed tomato or a plastic package of mozarella, they use natural and nearby products. That's why I think it's so difficult in other countries to approach what they do.
