    Puff Pastry - Basic Dough
    Ingredients:
    500 grams Plain Flour
    10 grams Salt
    8 grams Fine Sugar
    200 grams Butter (cold)
    240 grams Water (Cold)
    200 grams Butter (room temperature)
    Baking Temperature: 200°C
    Baking Time: 15 minutes
    Baking time may vary depending on the accuracy and type of your oven.
    Apricot Glaze
    50 grams Apricot Jam
    10 grams Water
    Heat up in the microwave for 10 to 20 seconds. Stir until the jam and water are well combined. Let it cool down before applying to the baked puff pastry.

      400 g of butter total.

    Tried two different puff pastry doughs in 2 days. This one is the better one. It has just the perfect amount of butter taste where it is not oozing with butter after you bake the puffs. It has beautiful visible layers after baking. Also, the amount of salt was perfect. The idea is shaping the parchment into the rectangular size you want and pressing and spreading the dough out til it fills out to each corner of your rectangular shaped parchment paper really works. The dough is still spreadable after being chilled for 1 hour. The dough can get soft if you don't work fast enough so if that happens then you can just refrigerate again. Any leftover dough from cutting out your shape, you can stack on top of each other and reroll it out. Video is easy to follow. Thank you for recipes.

    This is such an excellent method to make puff pastry dough. I made Apple Blossoms & Cinnamon Twists with this batch. The twists came out real good, actually the were one of the best desserts I've ever made. The Blossoms still need work. They sides came out perfect, but the bottoms were still a little undercooked. On my next try, I'm going to lower the temperature to 175 and bake for 25 or so minutes to see how they do. But, in any event, this is an excellent recipe that I highly recommend.

    This is the first recipe I came across which uses all the ingredients at room temp.i saw several recipes who use chilled ingredients.Never mind the results r amazing 👌👌👍

    Based on my observations through a number of bakers, I can conclude that Michael Lim had some kinds of training or courses or exposure about certain recipe of bakeries. That's nice. It is reliable and the outcomes are good for many bakeries shown. Fantastic !!!!!!

    Great Video! In the U.S., we would just buy the Pepperidge Farm's Frozen Puff Pastry (2 sheets) for only $5 US dollars. I'm sure yours is better, though. Now I know how time consuming it is! You are an amazing chef, Michael!

    Puff pastry is one recipe I never wanted to attempt. I would just buy those ready made ones. But now looking at this video, I definitely would want to make my own. I know your recipes never fails and you make it look so easy. I have been looking forward to your new release. I made the coffee sponge cake and it was a hit and I have been sharing your recipes with my friends, they all loved your easy instructions. Your raisin bread recipe us also my favourite.     Hello, Michael.I forgot to say this, watching you rolling and folding the pastry is, like a Mother tending her Child with Love.Seeing you doing this reminds me of My Hungarian Grand mother and Mother doing this in Australia.Delicious when they made Prune jam rolls or Kifli in Hungarian.

      Hello, Michael.Thank you for your lovely reply.It did evoke these memories indeed.Alas, I had never learned to make Hungarian type of cakes requiring such great workmanship.They also had done cakes with Pork Lard.Am not happy I do not do these. I became a Ladies Hairdresser and worked instead, as they did not.They were the Old fashioned Mothers who stayed at home and Knew all these ancient ways of Baking all sorts of Goodies for their families.Are you from China or Australia? I live in rural NSW.Australia, and being an older widow, I do not make, such gorgeous cakes-pastries for myself.But, It did give me Joy watching you being so great in creating this pastry.Keep doing your creative food making. Forgive my intrusion and curiosity also.I love International people and their cultures.I miss not knowing Europe .I came here with family aged 12 years of age with Sister and Parents in 1958. Love Cultures from all over the world and their music's's-history-food.We lived in Sydney's western suburb of Blacktown.Now in the Murrumbidgee Riverina Irrigation region.While I lived with my husband in Brisbane, we often went to the Chinese area in the City there.       Hi Marika, I lived in Potts Point Sydney. my god, so many years ago when I was still a teenager. That was like 30 years ago.
      Yes me too, I loved to go to the china town too in the city, hahah. Memories is coming back. And do you know what I think? I think Australia has the best baked cheese cake I ever tasted. Miss it so much. I am dreaming away....
