- This week we did our first ever LIVE Q&A session and we cooked the ultimate eggplant meze MÜTEBBEL together.. 😍❤️ You have asked, we have answered and it was A BLAST 🤩Thanks to all those who have participated and cooked with us! Servings: 2-3
Difficulty: Easy
Prep time: 2 minutes
Cooking time: 20 minutes
4 large eggplants
3 tablespoons tahini
5 heaped tablespoons yoghurt (250 g)
2 handful of pistachio (40 g), roughly chopped (strongly suggested to use the raw and green ones)
1,5 tablespoons butter
3 tablespoons olive oil
1 heaped teaspoon salt
2 cloves of garlic, peeled
To garnish,
3 sprigs of parsley, leaves picked
3 pinches of red pepper flakes
½ lemon’s zest
• Prick the eggplants with a knife or fork. Since there is air in the eggplants, they can burst when heated. This step is going to prevent that.
• If using a gas burner, place the eggplants directly over the heat source. You can place them on a rack as well. It will make it easier to turn the eggplants but take a little more time to cook. Cook until eggplants are completely tender and charred, turning occasionally. They will be cooked in around 10-15 minutes. Check near the stem and bottom ends to see if they are done.
• If using an oven, Heat your oven to 250 C (480 F) on grill mode. Lay down the eggplants on a tray and place the tray into the oven. Position the tray second shelf from the top. Cook until eggplants are completely tender and charred, turning occasionally. They will be cooked around 20-25 minutes. Check near the stem and bottom ends to see if they are done.
• Place the cooked eggplants in a large bowl and cover with a plate. Let them sweat for a couple of minutes. This will make it much easier to peel them.
• Meanwhile, mix the tahini, yoghurt and ½ teaspoon salt in a bowl and set aside.
• Melt a tablespoon butter in a large frying pan over medium-high heat. Sauté the pistachios for a minute and turn the heat off. Spare 1/3 of the pistachios for garnish.
• Working with one eggplant at a time, use a knife to slit each eggplant and open lengthwise. Scoop out flesh with a spoon. Be careful not to get your skin burned.
• Smash the garlic with a pinch of salt. Mince the eggplants with a chef knife.
• Add the garlic, eggplant and the olive oil into the pan and sauté for another 2 minutes. Sprinkle ½ teaspoon of salt and stir.
• Turn off the heat and set the mixture cool down for a minute. Stir in the tahini yogurt.
• Transfer the mutebbel on a dish. Finely grate the zest from half of a lemon over the mutebbel.
• Top with pistachios.
• Melt half tablespoon butter in a small saucepan. Sprinkle the red pepper flakes when the butter becomes foamy. Whisking or pouring the melted butter back into the pan constantly with the help of a spoon lets the air in and helps your butter to be foamy.
• Pour the butter on your mutebbel and sprinkle with the parsley leaves. Your insanely delicious and easy meze is ready to take you over the moon.

@@Refika hi from ireland! just getting over my 10th bout of shingles so i really sympathies with where you were, and the depression is so difficult to lift out of after shingles it can take well over a year. to everyone who gets shingles it really is a warning sign to look at your life, if you have underlying health issues you may seriously need to contemplate changes to your life style and work!

I just want to say, I never gave much thought to Turkish cuisine, but Refika and team are the best Turkish ambassadors!! And I love how you try to include a message in every video, to uplift and connect all of us. And the importance of love. Thank you. It is so heartening to see the shared humanity in all of us, and that there are more things that unite us than divide us. There will be those who will always want war/conflict, putting other people down etc, but there will be people like us, who want to have a better more just world.

It's a pity that only a minority of people are sincerely convinced with this idea... go in the street and ask TR/GR people if they would allow their daughter to marry a GR/TR dude, and count... Like for German and French, a good first step for peace in souls would be that both governments from GR and TR decide that TR and GR languages would be taught in all the nation, like ENG. It would open minds, create business dialog, and re-settle progressively reciproque tourism. I am sure that if a GR family goes to TR to visit and show that they know basic sentences and interaction in TR language, they will be hosted with the proverbial TR hospitality. I am sure that that the reciproque is also true. Basic people are fundamentally sweet, but propaganda in schoolbooks, in media, is efficient when there is a former lack of comprehension, of direct dialog btw people. Many German people know basics in French, they spent holidays there, and everything is ok. Many French scholars study German at school, and then visit, and then work in Germany maybe, build a family with German people, and so on.

the uhh, ahh,, is called speech banality...it is very common to people whose first language is not English...but research says that people who are multi language are more intelligent than those with only one language. Speaking a language which is not your mother tongue is difficult because you have to think, translate what you want to say... Your YT channel is very entertaining and educational. I am a Filipino married to an English guy so I have to cook the English way to feed my hubby. I love watching and imitating your recipes because i lived in Dubai for 19 years and 5 years in Saudi and i missed Mediterranean/arabic foods... I love your foods. I am all choked up! Your energy and hope and positive vibes give me hope. For sure, there are problems in Turkey may be a bit more than US or any other country but not as presented and/or exaggerated in western media. I have been to more than 50 countries and lived some of them for a while. This country is amazing in every aspect from its ancient history to its culture, from its cousine to its hospitality and diversity from its unic natural beauties, amazing landscapes to its beaches and turquoise waters. Whoever came and saw this country, all without exception had schoked and dissagreed with this western media propaganda. They want to underestimate the values of this country and devaluate its image in the world to prevent the re - rise of this great nation. I was born in Istanbul, but I've lived in Canada from the age of 5.
In 2022 I finally got to visit turkey for 2 months with my very active 85 year old father. We had the time of our lives.
When I got back all my friends asked how it was...I ranted and raved about the history and how it is the best food in the world !

I went to visit my son and his family in Jordan in June 2021 and fell in love with the people and the food there. I have been to Istanbul and just love the people and the food. For those not ever having been in Istanbul: So many people here have small shops and work 14-16 hours a day or have a second job selling produce on the street and working up to 16 hours a day. I so much respect these hard working people, who are always so friendly, good-humoured and welcoming. And the food is sooooo incredible - the main reason I got hooked on this wonderful channel.
