Nad Kudo I have tried to make udon from scratch but I didn't really like it.... It's a little pain in the neck to make it from scratch....You can use chicken, beef, or veggy stock instead.

Hi there, to anyone trying this recipe, I added the carrots after the pork just because I like some crunh. It ended up quite well so if you're like me and like some crunch add the carrots later
Marshall Perryman the texture as well as flavor will be heavily altered. udon is very heavy, but breaks apart easily if cooked just a bit longer than usual. glass noodles will retain their consistency more stubbornly and will create a duality with the creamy and tender broth/other ingredients.

if its something like katsuobushi you could probably order it online i'm assuming.. since its a dried food it wouldnt expire quickly..
